How is the texture of your cashew nut cookies ? Is it necessary to add baking powder or baking soda ? I noticed that some recipes have egg, baking powder & baking soda.
The texture is similar to traditional peanut cookies, no need to add baking powder or baking soda.

The texture for these cookies is similar to traditional peanut cookies, not crispy. You may try increase the flour and reduce the cashew nut to make it slightly harder.

can i ask if the half cashew nuts on top is roasted or unroasted?
Raw split cashew nut.
How long can I store it for?
Not sure, I finish within 2 weeks, 1 month should be fine I think.
