    开始做年饼咯, 传统白杏仁酥。制作方式快速简单,是个无白油,无发粉,无苏打粉食谱。面团里面采用了杏仁粉和烤香的杏仁片,烤好整个厨房充满杏仁香。低温慢烤,饼干出来颜色是扁白色的,跟一般牛油饼干的黄金色不同。新鲜出炉放凉后,掰开饼干,非常酥脆,用手指一压就散开。口感很好,搭配里面酥脆暴香的杏仁片和花生油搭配,好香好吃~
    收藏方式:烤好彻底凉透,室温收密封容器保存。要新鲜7天内吃。
    Start making CNY Cookies, traditional White Almond Cookies. The making method is quick and simple, it’s a no shortening, no baking powder, no baking soda recipe. The dough is made with almond flour and roasted almond flakes, thus the whole kitchen is full of almond aroma after baking. Slow bake at low temperature, yield relatively white color cookies, which is different from the golden color of ordinary butter cookies. Once freshly baked and cooled, crack open cookies, very flaky, but sand out when pressed with your fingers. The texture is very good, with the crunchy roasted almond flakes combined with peanut oil flavor, fragrant and delicious~
    Storage Method: Baked and let cool completely, store in airtight container at room temperature. For fresher flavors, eat within 7 day
    ♦食谱=27块饼干 (4厘米直径,1.3厘米厚度)=
    100克 杏仁片 (预热烤箱180C: 5-7分钟)
    140克 普通中筋面粉
    100克 玉米淀粉
    70g 糖粉
    60克 杏仁粉
    2克 盐
    130克 花生油
    (预热烤箱160C: 30分钟)
    (上下火,不开旋风,中层烤)
    ♦Recipe =27pcs Cookies (4cm diameter, 1.3cm thickness)=
    100g Almond Flakes (Preheated Oven 180C: 5-7minutes)
    140g All Purpose Flour
    100g Corn Starch
    70g Icing Sugar
    60g Almond Flour
    2g Salt
    130g Peanut Oil
    (Preheated Oven 160C: 30minutes)
    (Top Bottom Heat, No Fan Force, Middle Rack)

      Can I store my cookie dough 30 mins in the fridge before shaping and baking? Bcos the dough is slightly soft and oily due to warm area.

    We love almond biscuits. I lost the recipe I use from so long ago so I had been on a mission to find the right recipe. So I’m so glad to have been found your channel and recipe.       我只用了45g 糖。油只用80g。家人朋友都話很好吃。另外也做了黑芝麻的。都很好吃。謝謝 Iwen 老師的 Recipe 讓我们可以很容易跟著变化成自己的口味。

    I replaced peanut oil with 120ml canola oil mixed with 10ml of sesame oil since I don't have peanut oil. And I reduced the baking time to 25mins because first tray over baked at 30mins. It tastes great. My family loves it. Thanks teacher for the recipe!

      Oh maybe is still abit underbaked in your case, you can try to bake abit longer

    I made this but I think I put too much oil because the dough was quite wet. And after baked the outside is a bit sticky. I put the whole 130g oil because I thought the instructions was to put all 130g oil gradually, but I’m guessing you meant put the oil in gradually because you may not need to add all of it?? 😟

      Yes exactly, need to put in gradually or it will be hard to combine properly as well, also u might not need all of them

      Most likely underbaked. Also be sure to follow instructions carefully, oil to add in gradually in few portions so that your dough can absorb and combine well, don't dump in all at once, u might not need to use all of them, depends on your own flour absorption ability.

    If I want to make this for upcoming CNY, can I bake this beforehand (1 or 2 months prior) n kept in airtight container then sealed with tape? Is it still taste good/fresh?

      Actually best eaten within a week for freshest taste, but if you still tightly without any contact with air n water, should be able to keep longer.

      Don't recommend olive oil or sesame oil, afraid strong flavors will overpower the almond flavor, best to use peanut oil

      味道不太一样哦,可能奶香味会盖过杏仁味一些,你可以用无色无味的植物油,玉米油等。可是花生油更香

    每逢用cookies cutter , cut下去後不能這樣轉上來的, 這會另 旁邊的
    粉團鎖死,膨漲不好。就像做英式的scones 一樣,謹記!
