Also, what wonderful lessons your children are learning as to how to prepare your meat. I thought I saw Corbin’s hands in there slicing away. Happy New Year Hollar Family!
My family is from Germany, and plates laid out with different cheeses and sausages/waurts, etc. Accompanied by a few different kinds of breads alongside some simple salads/chutneys was called dinner.
We would often stand at the kitchen island with various of the above-mentioned faire and call that dinner too. Tables can be so formal lol

Man my mouth is watering... Good job guys. I remember those mornings as a child standing by the burn barrow sharpener knives waiting for the water to get hot enough to scald the hogs in. My dad cured his own hams. My mom and my grandma would cook out the lard, every door knob in the house would be greasy. Good to see you keeping the old way of doing things.

Your charcuterie board was absolutely beautiful! We have snack food dinners about once a month at our house, including New Year's Eve - fondly known as junk food night. Not much junk food involved, though, but the kids always thought they were having something forbidden, so those dinners seemed really special to them. Now that they're mostly all teens, they know the food is healthier than standard junk food, but they still seem to look forward to them and ask when the next one will be. We usually have some combination of pigs in a blanket, fish sticks, chicken nuggets, steamed shrimp, fries, fruit and yogurt salad, cranberry sauce, cheese and crackers, sheet pan chicken nachos, veggie plate with dip, various nuts, sometimes a bowl of M&Ms, root beer floats, brownies, cookies. I wish you the absolute best 2024, and look forward to your upcoming videos! Bless you all!

What a delight it is listening to the sophisticated discourse by your "boys" tasting the cured meat they/you all are eating. Such a blessed upbringing you are giving them. They are becoming very impressive young men. Brava/Bravo Mom and Dad. By the way, I LOVE the panned shot that went from the charcuterie table of your home-grown cured meat to your adjacent - at the moment - butchery table with the hoff/quarter of your stear sitting there. Talk about farm-to-table! Such a brilliant juxta position.

Happy New Year. Nice to see you cutting up your home grown beef rather than sending it out for processing. When I was first married I worked for a butcher, the beef and pork came in by half, chickens came in fresh on ice. Nothing like the plastic bags of meat now. I learned so much valuable info with that job. 65 now and over the years that knowledge has been an asset when I need to break down a harvested animal. Nicely done.
