I love watching your cakes and that mixing of colors is absolute perfection. It's just beautiful and satisfying to watch and imagine if we can get to your level one day :) The only thing I think it's a little dangerous is not showing how to proper stack them. For new bakers or someone who is not very familiar with tier cakes, your video will make them believe it's just stack one on top of the other and that's it. As a professional baker, I know that's not true. There's a whole inside structure to hold them together without collapsing. Thank you! Your work is stunning.

she uses genoise sponge cakes so they aren't that dense or heavy so I think that's why she wouldn't dowels only icing.
