Grandma's Cake

This cake, of Tuscan origins, but also very popular in Umbria, has a crumble pastry shell filled with custard (go see our video of the Perfect Custard!!). It is a timeless cake, perfect for all occasions.
For us it is a cake of memory, of Sundays with the whole family gathered around the same table!
Given its great popularity, unfortunately you lost the origin of this cake, which is even quoted by Pellegrino Artusi (writer, gastronome and Italian literary critic, considerated the father of Italian cuisine, lived in the nineteenth century): "... I found the pine nut cake and custard a pleasant mess, a pastry poor..."
N.B. We used a springform pan with a diameter of 24 cm.
