I've known some people, a family, like in this video, who owned a "Yatai" business in Fukuoka.They are the most dedicated hardworking people I've ever met in my entire years of travel in Asia, mainly in Japan. Although I'm an American, I fell in love with their culture, their people, their passion to do things with conviction, detailed hard work to get everything done with precision. Having a "Yatai" business is hard work. Because of very strick city guidelines, they were only given a small window of opportunity to start setting up their stall at exactly 5pm, and not earlier than 5pm, or they could get a warning or even penalized by the city.That's what we are seeing on this video.They were doing it as fast as they can to make sure they are up and running by the time office workers gets off from their job. If they failed, then they lose a big chunk of their business for the day. Their hard work just started, and it will be a long night for most of them, sometimes they would stay open until 2-3am in the morning, especially when they get real busy. The hardest part of having a "Yatai" business is when you call it day and start packing up. In a normal day, it would take them 2 hours, at least, to pack up everything, clean up and head home. To some of them, who has a limited budget to go around, the day is not over yet until they go to the market, buy what they need, re-stock and replenish their supplies for the day. They would be lucky to have a 3 to 4 hours of sleep on any given day. I admire these hardworking "Yatai" people a lot, and I'm already looking forward to visit Osaka and Fukuoka again when this Covid-19 thing is finally over, or the country of Japan relaxes it's requirements.

I can't imagine myself rebuilt whole stuff every day. Like I feel lazy even cleaning my room let alone build a restaurant then put it back every single day.
And just to let you know if you don’t know what the definition of a man hour is or women hour in this case. It means fit as many people as you have working that’s as many hours in reality. So for people set up for one hour that’s for man hours. It’s a lot of work. I’m so proud of them. What a great example.

what gets me is if the space is big enough for them to be there to open why not just put in a building like a cabin or hut freestanding on the location, so all the items can stay and is locked up each night. instead of having to put up and down every day look at the number of people needed and the time, so this set up in wages is not small. and bring all the items from a lock up location costs fuel. we are seeing this in good weather, show what it is like in bad and how wet they get before even starting to serve people.
