THE EASIEST WAY TO PRESERVE CHERRY TOMATOES | SIMPLE ITALIAN METHOD

- Preserving your bounty of cherry tomatoes has never been easier with this authentic Italian method from the Southern region of Calabria where my family is from. A few minutes of prep time will give you delicious, savory, tomato preserves ready to enjoy on bruschetta, crostini, or added to soups and pasta.
6 cups cherry tomatoes sliced in half
1 tsp salt
pepper to taste
thyme or rosemary
Lay the cherry tomatoes in a single layer on a baking sheet lined with parchment. Sprinkle with salt, pepper and thyme.
Bake at 250 degrees for about three hours checking to make sure they are not getting charred, just nicely browned and roasted
Remove from heat and and cool
When cool, spoon into a clean mason jar and cover with olive oil until tomatoes are submerged.
Will keep in the refrigerator for 3-4 months. Cover the remaining tomatoes with more oil as you use them so they are always submerged

I just made a jar of these and I can tell you they definitely will not last 3-4 months. It will be a miracle if they last the night. 😅 I have a baguette in the oven and I'm having a midnight feast. Sooooo delicious! Thank you.

I had 4 basketful of cherry tomatoes this year even without any time to care for it as my dear mum passed away. Did not know what to do, but this is great for the Canadian winter. Going to preserve them to enjoy later. Thanks for sharing.❤

Great idea!Question: can the oil be reused once the tomatoes are gone? It may be a silly question, I just wondered if the citric acid in the tomatoes somehow degrades the oil. Thanks in advance! love the cooking ideas.
I have re-used the oil to make dressings since it has a lovely flavor being infused with the tomatoes...just use it within a reasonable amount of time (within a couple of months) and keep it in the fridge....hope that helps :)

Yes it can, but you just scoop out what you need and it'll come to room temperature in a few minutes and liquify... hope that helps :)

My mum said , Nonna back home in Sicily, preserved whole tomatoes. But she couldn’t remember how. Thank you for video. My Zia has shown me how to make cheese and ricotta, like they did when living in Sicily. No preservatives, all natural ingredients. I make it all the time now. My Zia did discuss how they made rennet back then. Yes not for the faint hearted.

I bought some chili colorado sauce on sale and I have london broil in the freezer. I think I'll make a roast with the sauce and make burritos 🌯.

I made these on the weekend and they are amazing. However I just noticed that the oil has solidified completely. How do I keep it good to eat like day one?
Yes, the oil will solidify in the fridge so just take out what you need and let it come to room temperature or heat it slightly.....then cover any exposed tomatoes in the jar with more oil before putting it back in the fridge so the air doesn't get to them :)

I've never used frozen or grapeseed oil for this particular recipe but I can't see why not :)

Yes you can, the texture will change after freezing but very good to use for adding to soups, stews and pasta sauce :)

You sure can ... afterward your cookie sheet will just need some elbow grease to clean it though 😊
