    Looks gorgeous Ian.Grew up on this being from Liverpool.Everyone tends to have their own way.Been making this for over 40 years.Im sure my dad said that it was originally half lamb half beef.Many people would use beef due to the price of lamb I always do.If I use Lamb I would only ever put the sliced pots on top,lid on in the oven and take off for last 20 mins to brown the pots.Some people make a pastry crust to go ontop and it would be more of a lamb hotpot.Scouse is traditionally done on the hob( more modernly pressure or slow cooker) I've even made it with minced beef when the kids were little and times were hard.Also blind scouse thats everything but the meat! I just put the potatoes in at the start as some naturally break down anyway and it thickens up just the same without slicing some.Best of all is your beautiful pan of scouse there will taste even better the next day! Try it next time you make it.I also only ever use 2 beef oxo cubes in mine.I know some people who don't use any stock and just like the natural stock from the meat& veg( i feel it needs an oxo) salt pepper bung all veg and meat in from the start and cook.We would also serve it with pickled cabbage or beetroot just plonk a dollop ontop and scoff! Well done yours looked gorgeous i love lamb its my favourite meat😊

    Lovely, looks yummy. I usually use lamb fillets when I make hotpot. You could try frying the lamb chunks individually, so they don't touch each other. Its a bit time consuming but it stops the liquid coming out. Thanks for sharing this lovely recipe.

      @@BeddyEatsFood omg the end result of that stew would definitely put an Irish stew to shame 😂😂. So thick and wholesome definitely going to give it a try 🤞I was more used to my nannas blind stew though and if we were lucky we got a dumpling 🤣

    Wow Ian a healthy nutritious hearty meal, being from Leeds would go amazing inside a giant yorkshire pudding. Say its a good job you and Mand bought both those packs of lamb, as it rendered down to not such a huge amount when cooked did it. Would be great to freeze and then re heat another day love to you both as ever Maggie

    I prefer to use oil I transfer into my oil pump rather than the artificial stuff .it probably works out cheaper than that pre-made stuff ? Just a suggestion Ian ?

      I always use the guard on it for safety, it would literally slice your fingers off otherwise 🫣

    So lamb Scouse is basically lamb stew? Apparently I’ve been making it for decades, my father used to call it Irish Lamb stew. Mand asked me to send an email but I can’t find an address to send to?

    I have watched you and Amanda use that pressure cooker before.
    I keep thinking I should have one but I seem to use my slow cooker a great deal and wonder If really need both Ian?
