That's why most of their cuisine , Sichuan or Schezwan cuisine is spicy. Other part of China doesn't eat spicy food especially the South east China cities.

I made this recipe without garlic and it came out really well. it has very authentic taste and I am.using it for everything. you are truly amazing chef
Actually,schezuan sauce is made with actual schezuan pepper,which look like black pepper corns,but red. Because schezuan peppers are quite expensive, mostly, they use red chili pepper. Same thing with wasabi , since actual wasabi is quite expensive,they use horse radish root and for color, use horse radish leaves.
I made this today without celery as couldn't get it due to lockdown. Used combination of Guntur, Byadgi and Kashmiri chillies in 1:1:1 ratio of 100 gm each. I had tirphal at home so could get the Sichuan pepper powder. Kisaan tomato ketchup added at end Even without MSG, this turned out better than Ching's Secret which has MSG in it I think!! Thanks for sharing this recipe!! Kids loved it!!

Chef i always add equal quantity of tomatoes for marking the sauce and one pouch of maggi masala and black paper , oregano mix herbs and chilly flakes ....and it turn out to be good in taste and less spicy....
