Excellent question, Nicol! The oil in gives the balls some more moist texture. Remember, gluten-free flours are not rich in gluten, this means they have less water in their constitution. If you ad water instead of oil, it will disappear when cooked, the oil will stay inside the balls and create much more pleasant texture. What I can advise you to do is to substitute the water for unsweetened coconut yogurt, and add less oil since coconut has natural fats. Cheers! :)

Save the Spinach! You can put loose leaves in a container and freeze them. When you go to use the spinach the brittle frozen leaves can be easily crushed into "chopped" spinach to cook with. Spinach takes up so much room in the fridge that I sometimes wilt the leaves in one of my biggest pots, stirring them constantly over the heat. Just before they begin releasing moisture I stuff the wilted spinach into muffin tins to freeze. These leaves remain whole, but I have a quick cup of spinach to add to soups or smoothies, and, I reclaim valuable real estate in my refrigerator.

So I made them, wrung out the thawed spinach, added garam masala AND curry😄, plus black pepper cause black pepper gets added to everything in my kitchen😎, forgot the lemon juice, freezer break, then fried them cause I am an impatiant gal😄, and was out of any yoghurt so patched up an easy, brilliant dip I learned from my Syrian friends: lemon juice, garlic, cumin. The spinach balls are really crunchy, I love that! Would add more amount of the spices next time (I always am careful first time....😄), and had I had any pine nuts lying around I would have added them to the mixture, for some reason my mind thought that would be a nice addition! Thank you, Jana, for this quick and easy and UNIQUE! recipe!!!😘
