      @@elliesteller499 maybe they used the "discarded" carrot pieces as part of a mirepoix for a creamed soup! that's what I'd do. normally, for home cooking you'd only cut one side of the carrot to stop it from rolling and still use that piece to dice or julienne. ((:

      Breathe through your mouth while cutting onions. It's a bit difficult to get into habit, at least it was for me, but it helps prevent tears.

      I usually leave the peeled onion in a cold bowl first, let it set for 5 mins and then cut it. :)

    I am a graduate of Hotel and Restaurant Management. In college we are taught to do short cuts and how properly chopped anything but u won't achieve everything perfect if you don't have 1. Sharp knives in different sizes and kinds from paring knife to clever
    2. Measuring equipments
    3. Good pots and utensils
    4. A good burner or oven etc
    5. Patience and Passion to cook
    6. A tongue that you can trust

      I see so many people start suggesting this, but i actually never seen anyone does this.
      Not my nana, not my chef brother, not my wife, nobody.
      I see everyone on the internet saying it, but nobody in real life doing it. And i cook everywhere, I'm like the designated cook in family, work, or whatever events. But never seen it.
      I'm guessing it's a new thing that people just came up with, as they purchased more and more expensive knifes and cutting boards? I mean, it make sense enough for me...
      Cuz we know for sure that old people and cooking schools doesn't know about it.

      it makes it easier in an industrial situation where you have to quickly cut an onion. If you're a home chef it absolutely makes sense to look at the lines and increase the angle of your knife as you cut into the onion, but in an indutrial setting chefs don't want to mess around with having to angle their knife as they cut the edges of the onion. If you'll notice a cheff pretty much always keeps their knife on a flat angle because they learned their knife well enough that it's faster to do the "inefficient way" of making paralel cuts because they don't have to angle their knife with the onion. I used to angle my knife with the onion, but I was always left with large chunk of onions from the the 2 outer edges of the onion then I started to do the paralel cuts and those large chunks from the edge never appeared again.

    You dont drag the sharp edge of your knive across the board you are destroying your knife, also what you did with the onion.... those are not julienne, you don't cut it against the fiber you cut it with the fiber
