Chef, I just discovered you last night. I was born in Kenya to a Zimbabwean dad and Slovenian mom. Although I left there at 5years of age, I remember the chapatis fondly. Guess what? I made them today. I used half the recipe and made 8 beautifully soft and flaky chapatis. I used one for a breakfast wrap and got so inspired that I am currently making the Kenya style chicken curry, but using chicken thighs. I am so excited for lunch. Hello.. I do make chappattis. My family lives them. But I have Never made layered chappattis!!! We made the dough n put it in a container.....n put it in the fridge!! According who ever feels like chappattis.....we always have n enjoy them!! Yes my hubby n I liked them with Tea or coffee!! My boys enjoy plain chappattis with curry n eggs!!! The Kenyans are the best for Indian cuisine ... Once I visited a Restaurant in Nairobi... The waiter came and asked me for the order... I told him to bring whatever he wants... He smiled and came back after few minutes with nice chicken curry, spinach sag, and a hot bowl of soup with chapati and rice... He waited till I taste... So I tasted and was shocked... It tasted almost the same as the food my momma used to cook...I almost cried as It reminded me of my childhood... The waiter replied "I knew you would love this"
Touching story. I am not Indian, but years ago before we had the Internet, I took two 10 week courses at night school in Toronto that covered from the north to south of India. I need to start practicing the recipes again. I can cook a few of the Trinidadian Indian foods because we all cook the basic curry dishes there regardless of race.

I am from Trinidad. I have tried your paratha and bussup shot recipes but I had to do them a few times, but this came out perfect with one try. They are a bit different though. They are lighter and thinner for homemade.
My kids always opted to take Ugali in place of my rock hard mouth injuring chapatis😂😂. I came across this and for the first time in my life I made soft delicious mouth friendly chapatis that my kids enjoyed. Thank you for this. I now feel like wonder woman ready to conquer the world 😂😂💃💃

Chef Wainaina, thanks for sharing your recipe. I am a Kenyan living in Canada. The King Arthur's All Purpose flour here has lots of gluten which makes it difficult to cook Chapatis. Only recently I discovered that the King Arthur's Pastry and Cake flour is very similar to the AP flour in Kenya and so ideal for chapatis
