Does it matter if you space out the double sided adhesive?
Wherever there is no adhesive you can expect the fabric to droop and slowly pull away from the areas that are taped. With drooping fabric, the star light from the optic could be masked and you want them exposed without being covered. Short answer, yes it matters. You could use black thumb tacks with large heads to reinforce the areas without tape, too. Similar to these: amzn.to/47YQKSB

I like the finished product. But anybody considering this should plan the electrical so you can avoid running an extension cord through the wall, a code violation.
Absolutely, and like I said, I failed to do that and would never recommend anyone do it for the sake of skipping that step. Honestly, I was so burned out after building the entire basement I had for a period of time decided not put the ceiling in and skipped the outlet. Bad move.
