  • 6 pig tails cut into 2" pieces
    1 tbsp coconut chili oil
    1/2 cup chopped onions
    2 pimento peppers chopped
    1/2 cup mini bell peppers chopped
    2 tbsp. minced garlic
    1 cup chopped celery
    2 scallions chopped
    3 pounds cassava / yuca
    3 cups chopped spinach
    6 cups coconut milk
    1/2 tsp ap seasoning
    1 tbsp golden ray or unsalted butter

    I often make this when breadfruit is unavailable or expensive and let me tell you it is DELICIOUS!!!

    I am Making this Tomorrow after God for my Birthday..I am using Dasheen. Breadfruit and some Green figs..#Upstate New York in the Building..lol

    😱😱😱I loooove pigtails but not cassava. Thinking I can make this with dumplings which I prefer and love. Yum 😋. Thanks for the idea Natasha.

      That is a good idea. Never thought of oil down with dumplings instead.

      You could make it with green bananas or green plantains if you don't like cassava.

      Marsha Papanicolas we Trinidadians make crab and dumplings so thinking this would be a good idea using pigtails 😀

    How do you know if the pig tail is salty? Also, can I add potatoes and when during the cooking time?

    My cassava is already in the freezer. I will omit the meat, but I will put some chunks of carrots and ofc dumplings. Thanks much

      You can use smoked turkey neck bones if you dont like pigtails.

    You can soak pigtails in cold water over night to remove the salt

      No it has to be boiled to remove excess salt and to soften it because it needs extra time to cook.

    Can you use fresh pigtails. No salt ever added? I’m trying to avoid the salt.

    Hy girl love this dish but I don't eat pork what other meat can I use ? I want to use a meat that sticks to the bone after the meal is finished . I know you never use to eat pork so I'm sure I'll get a delicious response from you 😉

      Any salted meat will work. I stopped eating beef not pork.lol. you can use turkey thats smoked or salt fish or just do a vegetarian version.
