How to make Ofada Sauce/ Stew| NIGERIAN FOOD

  • This is how I make Ofada sauce/ stew
    Ingredients Used;
    4 bell peppers
    3 scotch bonnets
    2 onions
    Assorted meat (beef, goat meat and cow foot)
    Ponmo (cow skin)
    Stock fish
    Handful of smoked prawns
    1 TBS of cray fish
    1 TBS iru (locust beans)
    11/2 cups of palm oil
    1 cup of meat stock
    Boiled Eggs (optional)
    3 cubes of Knorr chicken stock
    pinch of salt (optional)
    (serves 3-4)
    Music- Afro pop beat// illuminaija.com

    I made this recipe tonight, tastes great but next time I will grind the smoked prawns to a powder. The meats I used were goat, beef, tripe, lambs tongue, stock fish & ponmo

      +Onyeodi Benedicta It's not necessary. As long as the oil is really hot before u fry the stew...

    Hello again, Enny. I have a question about the dried prawns. Do you remove the heads, tails and part of the shell prior to cooking with them? I do that, despite it being time-consuming, out of a concern that if I don't, the food will have an undesirable taste. However, I use ground prawns fairly often in my cooking and I doubt that such extra precautions are taken prior to grinding the prawns. What's your take on this issue? Thanks!

      Hi Jacqueline, in this particular video i did not remove the heads or tails on the prawns and it did not affect the taste whatsoever. Yes it can be time consuming but i skip this step. I personally don't think theres anything wrong with the heads and it did doesn't give the stew an undesirable taste but I know some people do not like cray fish heads and prawn heads so they take it off. You are right I really doubt they remove cray fish head before grounding. hope this helps.

    Secondly is there another name for the red bell pepper and can I get it in Nigeria market

      Hi, no I didn't not bleach the oil. I just let it get really hot. The bell pepper is the same as tatashe at the market in Nigeria. Hope this helps 😊

      With the ball pepper u can use green or red ball ..but tomatoes is a no no

      +qwin temia hello, I used a Kenwood food processor which works perfectly. But u can still achieve the texture with a blender.

      BossyMiss the oil is not even enough. The way and manner it is cooked, you have to add more oil to it.

      You may add if u so desire...say one or two..however, it's more of a pepper stew, but some people add one or two tomatoes..It's all about preference.
