I have worked in wastewater treatment so I would be tempted to treat the water so I could drink it but maybe just not cost effective. I might be looking at being the copy cat from Australia :)

House is perfect except where the kitchen is located. It would be much better if it's in the back. And use that front area as a lounge were you and your visitors can enjoy. It's just my opinion.

You need to the pressure tank to act as a buffer, otherwise the short cycling of your pump will drastically reduce its life.
