Some rented apartments do not have air conditioning because the owner does not care about the cost of electricity.
I grew up in Zakopane until I was ten years old so I know all the Polish breakfast food you are talking about! i used to eat it! Now my stomach is so sensitive i dont know why!
Maybe the "Biedronka" store does not have gluten-free products because it is the store with the cheapest goods, but in larger stores such as Aldi, Tesco, etc. there are stands with gluten-free products. Go to better stores.
