    The key to perfect rice is to use a 2/1 ratio! 2 for the liquid 1 for the rice, and also do not touch it!!! Once it’s on the stove let it be, once all the liquid is gone let it sit for 10ish minutes and then you can fluff with a fork! Also i recommend using basmati rice as it’s a longer grain so it’s harder to make it mushy. Hope that helps! 🫶🏼

    2:1 ratio for water:rice
    - bring water to boil
    - add rice, give a little stir
    - bring back to boil
    - reduce to medium heat until water is level with rice
    - turn heating off, put lid on and leave for 5-10 mins to absorb the remaining water/steam cook
    - fluffy with a fork and enjoy

    My favourite healthy homemade lemonade is lemon juice, agave and mineral water. Sometimes I flavour infuse with a sprinkle of rose petals, lavender buds, or hibiscus. It's sooo good.

    Sounds strange but works EVERY TIME. 1. Wash your rice! 2. Soak your rice for about 20 mins. 3. fill with water until it’s above the rice… about half way of the first third of your finger. 4. High heat for 10 mins (from when the ring is cold) 5. Low heat 5 mins. 6. Off the heat to steam for 5 mins. Perfect rice every time. Do NOT take the lid off or stir the rice. Hope this helps 😅

    I totally get your aversion to touching flour! Same girl! One trick that’s been a game-changer for me is wearing rubber gloves while kneading dough. It might sound odd, but it makes the process so much more pleasant! I just put the gloves on, wash my hands as usual, and dive in-no sticky mess. Maybe it’s not necessary to wash them beforehand, but it feels right to me, haha!

    Recipe for perfect Basmati rice:
    Rinse your Basmati (and preferably soak it after rinsing) for 1hr or so, bring 1,5 times the amount of water (so 1 cup rice + 1.5 cups water or 2cups of rice + 3 cups of water etc.) to a boil.
    Add the rice to the boiling water along with salt or stock-powder, cover with a lid and turn it down to the lowest heat-setting of your stove. Then set a timer for 12 minutes, after 12 minutes turn the stove off and let it sit in there for 10more minutes to keep steaming.
    Then you can open it and fluff it up with a fork.
    The most important part of the whole process is the following: NEVER open the lid during the whole process, once you added the rice until after the 10 minutes waiting period.
    No need to be scared of burning it, as your stove is turned down very low, while cooking :)

    Hi Amanda, I love these recipes! Thank you for sharing them all with us,😊and also, your darker hair looks absolutely lovely on you😍 I wanted to ask if you ever add protein powder to your cooked oatmeal, and if you make your own hummus. If so, do you have a favourite recipe? And I’m curious what would be the equivalent of butter beans for those in Canada/US? Thank you so much! 💖

      Yes I do add protein powder sometimes, but no I typically don’t make my own hummus! My favourite hummus is one that we get from a Lebanese deli, it’s so creamy and delicious 🧡

    That Crispy rice salad looked SO good!! 🔥
    I’m gona make it & top it with roasted, salted peanuts 🫠
    I didn’t know lemonade wasn’t a thing in Australia? I figured since it was so sunny it would be another typical warm climate place with lots of lemonade & fruit juices.. 🤔 I friggin LOVE lemons, it’s bad 😅 good thing they’re super healthy.
    How I cook rice on the stove; 1.5 cup water to every 1 cup rice, salt generously, add a glug of nice olive oil, cook on high in a pot until roiling boil, as soon as it starts to roiling boil, stir & turn heat to low, cover with a loose fitting lid to prevent flashing, watch it & stir as needed for 15 mins. Stir one last time, put lid on tightly, let sit for 20 mins, stir, serve. Works perfectly every time 👌
    (Note, I mostly use Jasmine rice, Longer grained rice like Indian Rice, may take a few minutes longer) 🌾

    Nice dishes. With rice, you must cover and leave alone. Also cook on low heat and keep lid on for at least 30 minutes after cooking. Alternatively, cook for 0 minutes in an Instant pot and leave for 30 minutes or use a rice cooker which is the easiest option. Defo never stir rice and eat it on the same day. 😊

    I made your sweet potato lentil pie tonight, which we enjoyed. Why don't you get a rice cooker? It is so incredibly easy. For white rice put in one cup of rice to one-and-a-half cups of water...turn it on....walk away and do other things. Once it pops I like to let it sit with the warmer on for about ten minutes. Your hair looks great that colour. It really suits you and makes your eyes pop.

      Honestly our only reason for not having a rice cooker is that we don’t have the storage! But I am definitely considering one now

      @@AmandaDucks I think you can get little ones too. But, yeah, they make rice soooooo easy. Sometimes I'll also throw in some vegies close to the end of cooking...eg green beans, kale, asparagus...etc...if you don't have much time. And if I'm really short on time I would do a 'one pot wonder'...just throw in your rice, you can add in some edamame beans, some kale or whatever and some tofu...so you could spend under five minutes preparing dinner...and then just throw on some chilli sauce, etc and just eat. So you can create a whole meal from a rice cooker if you need to! 🙂
