    I make cannoli for my deli . We use wooden dowels cut to size depending on size of cannoli . The metal I found get too hot in the oil and burn the dough. You can use ricotta and wrap in cheese cloth in a sieve overnight to drain all the water. OR just buy impastata ricotta cheeses. It’s a much much drier form of regular ricotta works great every time. Add a drop of cinnamon oil to the shell dough and the filling. We also add diced up citron or chopped pistachios . That the authentic style from Italy

    Just a little FYI. You can melt chocolate, add a little crisco to it and then dribble it into the shells to coat them, then add the filling.
    The grands like them like that.😊

    For a "Cheater Cannoli" you can use the waffle cones (cone shaped not flat bottom) with the filling. I learned this trick at a Catholic church making desserts for a fund raiser...no lie.

    WIsh I could find a recipe section that has recipes for people who hate vegetables, (except tomato/pizza sauce on pasta) fruit, seafood, eggs, and don't generally eat meat except on special occasions.

    OMG don't eat the Cannoli, they'll kill you 😀 What movie was that?
    These look great though, I'm sure NOBODY is going to kill you for eating them.
    The Pasta Attachment is WAY OVER PRICED, just burn a few calories and hand crank your Pasta. "Handmade Pasta".
