TRICKS OF A SUSHI BAR: Spicy Japanese Mayo

  • Sushi Bars use simple sauces to DRASTICALLY change their menus and enhance their prices. Everyone's enjoyed Spicy Japanese Mayo. I show you how to make it at home for pennies.
    Some folks use masago, others use paprika...but since some people have allergies to both, I purposely kept the recipe to the basic ingredients. If you want, you may also want to consider using soy sauce, mirin and a touch of rice vinegar. Also, Kewpie (Japanese mayo) is not used for Spicy Mayo in the USA...and Spicy Mayo isn't even a suitable sushi item in Japan. Kewpie is not a common component.

    Now take that spicey mayo and use it to make a grilled cheese. Mayo has become my most important ingredient in making a grilled cheese instead of using butter. The different flavors you can add to the mayo opens up a whole new world of taste and flavour!!!

      How was this straightforward? We literally got a story on what his wife wanted for dinner, then got to see his takeout order, then got a background in his 12 year career, then the prices of store brand spicy mayo , then the absolute trash of a joke about socks, then a short lesson on what mayo he uses and how chili sauce is chili sauce. Then after all the extra two mins of bull, we get to learn that spicy mayo is awesome on his microwave French fries.

      Thank you so much. As I indicate within the video description, you can add many more things to it - fish roe, paprika, etc....but this was the most basic and easy spicy mayo to make at home. I keep it simple. 🙂

    I usually add just few drops of freshly squeezd lemon or orange juice, its add nice citrusy flavour to it.

    I’ve tried making it with these ingredients but it never has the same sweet/tangy flavor from sushi bars and restaurants 😕

      If they are offering a spicy Japanese mayo with a 'tangy flavor' it might be that they are using Kewpie (Japanese mayo).

      Some use vegan mayo. I use to work at a Korean restaurant and the spicy mayo and hosin mayo was always my favorite.

      Until it's all gone! You don't have to refrigerate it at all..but considering the heat around the world...I'd recommend it. :)

    when you say sesame oil, do you mean toasted sesame or not?

      Although it depends on the chef (and there are also dozens of oil to choose from), I have always used something name 'Sesame Chili oil'. I also just checked all of my bottles and none of them say 'toasted sesame' on the bottle. But for all I know, it would add to the taste! Hope this helps!

    Can someone help me? he said sesame oil and chili sesame chili oil. so you. so you using both oils or just one or the other?

      Use one or the other. In the video, I explain that you can use sesame oil itself. But if you choose to use sesame chili oil will give it an additional kick.

      Thanks for the comment but it's not that easy/common. If I'm meeting with suppliers, picking up ingredients and running errands between classes, I may not have time to sit down in the kitchen and prep for sushi making. I'll be honest with you - I rarely do it (picking up retail sushi for my wife). In fact, it so rarely that I checked the receipt to see what they are charging customers...and that prompted me to make the video. Thanks again for the comment!

    U show seasme chili oil yet u dont add it ? Is it either add normal seasme oil or seasme chili oil ?

      You can use either one. As I mention in the video, chili oil may add a little 'heat' to the flavor. As the video explains, you can use sesame oil or sesame chili oil. If you want to add extra 'heat', use the chili oil instead.

    No chance! The main ingredient is real Japanese mayo (Kewpie Mayonaise).

      No sir. Dead wrong. That's attempting to make it more 'Japanese.' Spicy Mayo isn't used in Japan for sushi. Spicy Mayo, for sushi, was invented in Los Angeles long before Kewpie ever made it to America through the JFC. No offense, sir, but you're using your own lack of knowledge and attempting to morph it into a fact for your preference. Kewpie is way too sweet for the common spicy mayo, takes longer to blend with chili oil and tends to separate in the contrined because Kewpie intentionally contains twice as much egg yolk. But thanks for trying.

    Confused how you are a sushi chef using regular mayo instead of Japanese mayo

      I'm a sushi instructor. I am the person who teaches sushi chefs. Three reasons - (1) to use Japanese mayo (kewipe) for spicy mayo is an oxymoron. You're making an America fusion sauce. Using a Japanese mayo doesn't make it any more authentic. In fact, it insults Japan. Spicy Mayo was invented in Los Angeles, not Utsunomiya. (2) Kewpie contains more sugar then regular mayo. It would lend to a sweeter flavor. Using Kewpie would not produce the same flavor that an amateur sushi eater is expecting. (3) These RUclips videos are designed to teach basic instruction. As you noticed, this video was intentionally kept to 3 minutes. To expect every viewer to have access to Kewpie (or even know what it is) goes against the entire point of the video themselves. To be honest, I'd recommend understanding ther finer points of the craft before making comments that demonstrate a total lack of knowledge. Thanks for the comment.

    This is not it. For REAL restaurant sushi chili mayo (i work at a sushi restaurant) you need hot siracha sauce, lime , lemon sugar, jjapanese assorted pepper flakes, salad mayonaise, chhili oil, kimchi sauce and a tiny bit of red food coloring.

      Nice try...but dead wrong. I am a sushi instructor. If you're under the impression that spicy mayo includes kimchi sauce and red food coloring, you are dead, dead, dead, wrong. Perhaps the sushi spot YOU work for does that...but that is most definitely not the norm at all. To add a Korean Kimchi sauce to spicy Japanese mayo? Nope. Nice try.
