The coconut and spices are roasted before grinding. This paste can then be used to prepare a curry whether for meats/poultry/seafood. The classic Goan prawn curry is, as seen in this recipe, pretty simple and is flavoured (comparatively) lightly. Our classic Goan recipes have so many variations in preparation, and I think that makes them all the more special- as you have already said, the core of it is the same, yet there is always a unique touch that makes it feel more like home 💕 The preference for the type of chillies would depend on palate and the eyes! No harm in adding more of one type, or skipping one entirely. Hello Theresa :) All you've mentioned could possibly make a curry sour, yes, which is why quality of ingredients and judgement in taste should be considered. In this particular recipe, I found that the onions help balance the acidity of tomatoes and also, that a higher hint of sourness (from tamarind/aambya Sol) at the start can help the prawns draw greater flavour from curry as it is allowed to simmer. It's like the curry lends acidity to the prawns to make the taste of the latter more pronounced (working almost like a marinade). The end result is more balanced than expected 💫 Also, thanks for your question, you asked it very gracefully💕
