I seasoned the chicken things lightly with some generic chicken seasoning and a bit of tumeric, because I'm always afraid the the chicken tasting dull. All in all, EXCELLENT recipe, easy, no exotic spices, DELICIOUS outcome!.
Next time will add more green chillies and perhaps swap the dried red chillies for fresh red ones to raise the heat to Indonesian taste. That aside, it was a delicious, well balanced delight. Thank you!

Lovely, but don’t add the prawns in that early unless they are still in the shell. Personally I left the shell on. One, helps the meat to absorb the juices whilst leaving it tender. And it gives the curry a more “seafood” taste.

Traditionally coconut milk is made by grinding the coconut flesh with water and straining the coconut milk. 1st time the coconut milk is taken out it’s called thick extract- thick coconut milk. After this more water is added to the ground coconut and the coconut milk is strained a 2nd time. Since this is not so thick it is called thin extract. For you, in case you’re using readymade coconut milk it will be quite thick so you can use that for thick extract and when thin extract is required dilute it with little water. Hope this helps Ken 😊

It's called chingri machher malai curry.... It's a bengali dish ( I am from Kolkata)

My gravy did not come out smooth. The onions were crunchy.
