    INGREDIENTS (for 8 serving)
    A handful of lotus seeds (from Chinese Medical Hall)
    A handful of dried lily bulbs (from Chinese Medical Hall)
    2 small, dried honey dates (from Chinese Medical Hall)
    8 red dates, each cut into half, remove seeds (from Chinese Medical Hall)
    1 tuber of Huai Shan (500g), shave skin and cut into pieces (from market / supermarket)
    12 bowls of water
    1 kg chicken, skin-off OR breast meat
    1 piece of approx. 500g huai shan (Chinese yam)
    ½ tablespoon of salt
    1 tablespoon of light soya sauce
    INSTRUCTIONS
    Let’s begin by putting the lily bulbs and lotus seeds into the pot
    Huai Shan, red dates and chicken. All must be well-washed beforehand.
    Cut chicken into pieces with skin-off and the fats removed. Wash away all blood clots and drain the water (may use lean breast meat as substitute for convenience)
    Adding 12 bowls of water
    Bring it to boil.
    Then turn heat down to medium and continue boiling for 2 hours.
    Then turn heat down to very low and boil for another 30 mins.
    Add some salt (½ tablespoon) and some light soya sauce (1 tablespoon)
    And the soup is ready to be served!

      At the vegetable section of supermarkets. It is usually string-wrapped or in a vacuum pack. It can be found at markets too.
