    This dough bun steam is good, but some people's don't likes it, because when you chew it ,the dough sticking on the teeth,just wanted the dry one ,thank you, but the way you prepared the dough Is amazing,nice,👍

    Hi, I saw link end of video on sourdough and the sourdough video doesn't use bakers ammonia. Can i confirm that this will also result in smiling /cracked bao skin like what you showed? Many thanks.

      If you don’t have baker ammonia, you don’t need to add it in and buns will crack as well. Thank you for your support!

      @Da-Kitchen thanks so much. The bao that you made looks so nice and I have bakers ammonia, just that the smell was overwhelming when I tried making char siew bao earlier. The smell didn't go away even when I tried steaming the bao for longer and multiple times steaming the baos.

      I see, it happened sometimes when I was work in a restaurant. Do the buns are cracked? If they are cracked I don’t think you need to add baker ammonia in.

      你好!老面包子就是酒楼喝茶里面,篜叉烧包皮一样的口感,老面做出来的包和没有老面做出来的包,口感和味道完全是不一样的

    達哥師傅,請問從冰箱提早3小時拿出冷藏餘下的老麵,要再發酵幾多小時呢?才继續加低筋麵粉和温水呢!

      你好!老面在冷藏冰箱拿出来放在比较温的地方三到五个小时后,再加低筋面粉和温水搅拌均匀光滑,同样的放在比较温的地方发酵12到18个小时左右,然后加白糖,泡打粉等等搅拌均匀有一些弹性就可以包馅料下去拿去蒸

    Chef, the dough that you put in the bowl with water, is it sour dough too? What's the ingredients for that dough? if don't have lye water and lard what to replace? What's the purpose of using lye water?

      If you don’t have Lard, try to use corn oil instead. The lye water is used to neutralize the acidity in the dough, ensuring a balanced PH.
