    I'm watching from New Zealand. We have pretty good mullet too and I like to brine mine overnight, dry them off and smoke for several hours on a fire of manuka, a local hardwood.. I see you guys split from the back down where we do it the other way and cut from the gut and leave a join at the back. I like to finish off with some manuka leaves or pohutukawa. I imagine both methods taste great.

    I hear using Everglades Rub is great with Mullet. At least they say that here in Florida. Haven’t tried it yet.

    Thanks for the great video. How difficult is it to separate the meat from the bones compared to other fish? I'm trying to figure out the minimum size worth keeping, guessing about 12".

      It's very easy when they are done the back bones ppulls out easy and you can eat 5he meat out in between the bones the ribbon bones come out real easy they are any where from 12 to 18 inch's
      When I make my dip I pick all the mullet then pick again then run threw a meat grinder so if any bones are in it you won't know.

    Awesome upload. You are a pro with processing different animals with a trapper knife. I’d like to see a video one day of all your trapper knives. Take care.

      Just have to keep them Shooed a way or clean you catch in a screened in room once on the smoker the smoke will do the job
