    📜 Ingredients for 6 servings:
    500g (1.1 lbs) potatoes
    200g (7 oz) celery
    100g (3.5 oz) red carrot
    1 medium onion
    50g (1.7 oz) butter
    1l (34 fl oz) chicken broth
    1 handful parsley
    1 clove garlic
    150ml (5.3 fl oz) half-and-half (12% fat cream)
    bread for croutons
    salt, pepper
    Dice all the vegetables (except garlic).
    Heat the butter in a pot over medium heat. Add onion and let cook, stirring occasionally until softened.
    Stir in the potatoes, the celery, and the carrot. Pour in the broth so that the liquid covers the vegetables. Add salt, bring to boil and let simmer, covered with a lid, for 30 minutes.
    Roast or grill the bread slices until golden brown, cut them into cubes and spread with the garlic.
    Pour the soup in a blender and blend until smooth. Pour in half-and-half while blending.
    Finally, pour the mixture through a strainer to remove lumps. While serving, sprinkle the soup with chopped parsley, pepper, and put some croutons in the middle.
