    Bonjour, je suis toujours en admiration devant vos réalisations. Cependant, quand j'essaie d'en réaliser une, ma pate est toujours beaucoup trop souple et molle. Je n'arrive donc pas à la bouler correctement. Pouvez me dire qu'elle farine vous utilisez. Merci. Cordialement. Francis D.

    Good morning . I just tried your recipe. dough with 100% hydration is soup. Impossible to work. I used a traditional red label T65 flour coming directly from a mill. The dough that you show us in your video is not 100% hydrated. Or you made a mistake in the recipe, or you take people for idiots. I put everything in the trash. give us the brand and type of your flour

      I'm very sorry, I found the problem you mentioned! I made a mistake when editing the recipe, the amount of flour is not 200g! The correct amount is 290g and the overall moisture content of the bread is 75%!
