Danny Trejo is, by all reports, a genuinely great guy with a somewhat checkered past. He is trying to leave the world better than he helped make it as a younger man and is apparently super nice and fun now.
Can confirm - Danny Trejo's cookbook rocks. I regularly make stuff from it - barbacoa, carne asada, roasted Cauliflower tacos, nacho donuts... there's tons of stuff that's really fun to try making.
I stay watching an entire video because it never remains the same. So many videos are setup too professionally - set in a studio, using cinema-grade cameras, ridiculous lighting setups, and backgrounds that don't really represent anything. Your videos are 'humanly professional'. The cameras sometimes handheld. The lighting works without looking like you spent 3 days setting it up. The background represents what the video is about AND it's evidently not just a show kitchen. Sometimes you cut to a clip of the dog, or family. Sometimes it's a clip of you in the car, or in the supermarket. It's comfortably unpredictable, and that's why it works. So many channels have gone all-in on 'showtime' and have lost the human element. So many don't offer their opinions. So many don't offer one-liners. You've nailed the balance in your videos - please, never change the formula.
he's tried to change several times over the years, every time there massive backlash and he's changes back.. though i keep commenting and telling him if he needs someone to help him then they need to take the job knowing they need to imitate barry's "guy in his kitchen" style, and not try to turn him into a overly produced tv chef. though at the same time i think barry tends to become more self conscious and he just acts differently when theres another person in the room, which is perfectly normal, but it's just another way his videos feel different when he brings someone else in to help.
I'm glad he able to accept the backlash and change* especially on the internet, people tend to become over critical of everything, like I'm doing right now@@ge2719

But: Allspice, also known as Jamaica pepper, myrtle pepper, pimenta, or pimento, is the dried unripe berry of Pimenta dioica, a midcanopy tree native to the Greater Antilles, southern Mexico, and Central America, now cultivated in many warm parts of the world.
@@elenasimon1270 Usually in stores you can buy a 'mixed spice' in those same little jars that is a premixed version of those first spices. That's probably what Barry was confusing the allspice with.

my first thought when Barry mentioned that her cookies got "mixed" reviews was that it was just a lot of her haters leaving bad reviews there's no way a cookie with as much depth of flavor as that would taste bad

Allspice ISN"T a mix of spices. It is a berry like pepper that comes from the Caribbean. The reason it is called "Allspice" is because the Spanish were looking for a faster way to get the spices from Asia and thought it tasted like a combination of the Asian spices. This was a way to market it to the people of Europe.

Micro amounts of cayenne pepper is an old baker's hack to bring out more flavor notes from the chocolate. I use both that and brewed espresso in my chocolate chip cookies. The flour, butter, and sugar guarantee you don't get the heat from the cayenne at all. Just more chocolate flavor. 🍫
the irony is that this is also why some people (like me) add cocoa or baker's chocolate to chili con carne recipes....to really elevate the flavor and richness of the chili you can also use espresso powder

That first recipe is exactly why you need a stand mixer. The gingerbread cookie I make at Christmas is thick like that. I couldn't make them without my Kitchen Aid stand mixer. Can't wait to try those Mexican hot chocolate cookies. We used to have a lovely crepe restaurant in our city that sold a lovely Mexican hot chocolate. (Sadly, they didn't survive the pandemic.)
The first cookies you made look very similar to a cookie I make called chocolate sparklers. I have never added the pepper though. But they are absolutely amazing! 🤤

@@mrbarrylewis there are a few, one is called Dreams (drömmar), one that is my mom's favourite and is called syrup cookies ( sirapskakor) and we have chocolate snittar they look like syrups cookies but with cocao instead of golden syrup and pearlsugar ontop, one is called finnish sticks (finska pinnar), one is called cinnanon cookies ( kanel kakor) and the last one that I can think of is called alomond cookies( mandelkubb) i have recipes to all of them i can give you in english. So, if like a lot of people, you order a 'Chai Tea', then you are actually asking for a 'Tea Tea'. I've drunk Chai for years, and always enjoy it. It should be made with hot milk, but not being a fan of overly milky drinks, I brew it from leaf tea, and add milk and sugar as normal. It'll wake you up, definitely.👌👌👌
There was a family owned bakery shop near me that used to make doughnuts similar to Trejos cookies. Not exactly the same obvously. lol. They sadly closed when the owners died and the family closed and sold the shop.😢😢
Not sure if you will read this but have you tried these recipes? Chocolate chip cookies but you add in dry Vanilla pudding mix while mixing up the recipe. Peanut butter banana cookies, just peanut butter cookies but with dry banana pudding mix into the mixture
Fun fact: allspice is actually not a spice mix (as the name might imply), but its own spice made from the berries of a tree native to central America and the Caribbean!
The recipe with the sugar and the cookie dough and the cayenne pepper it's actually based on an ancient recipe Aztec and recipe they used to use that and chili peppers in the chocolate and it gave a warming sensation I'm not going to go into the recipe here you can look it up under Max Miller he gives a whole thing on it his thing is called tasting history.

My 13 yr old daughter and I have made the Taylor's Chai cookies and I didn't like the oil addition. We made them with all butter and I much rather prefer them over the oil version.

TBH I probably would use a wooden spoon for this after the basic butter and flour. Doing it by hand would weirdly be easier and would make a more tender cookie. (It's not a biscuit, Danny isn't from the UK)
My favorite fact about Machete is that the character was actually created for the Spy Kids movies, and that's where he makes his first appearance as the character! The Machete movies are a kind of spinoff!

I know you love Head Wisk for the videos, butI know you have another mixer, so why don't you use it on tougher doughs?
Proper allspice doesn't consist of those other spices but comes from the allspice berries.
Should get a Danish dough whisk for things like cookie dough. I’ve found it much easier.

Allspice is not a spice mixture. It's a specific plant. It's called that because it tastes a bit like a mix of cinnamon, nutmeg and clove.

TBH I probably would use a wooden spoon for this after the basic butter and flour. Doing it by hand would weirdly be easier and would make a more tender cookie. (It's not a biscuit, Danny isn't from the UK)
