Danny Trejo’s Mexican Hot Chocolate Cookies
For the cookies
300g plain flour
50g cocoa powder
2tsp cream of tartar
1tspo bicarbonate soda
Pinch salt
115g butter, softened
300g sugar
2 large eggs
80g dark chocolate chips
Hot Cinnamon sugar
100g granulated sugar
2tbsp cinnamon
1tsp cayenne pepper
Snoop Dogg’s Rolls Royce PB-Chocolate Chip Cookies
210g plain flour
1tsp bicarbonate soda
Pinch salt
220g butter, softened
130g peanut butter (crunchy or smooth)
100g light brown sugar
100g sugar
1 large egg
1tsp vanilla extract
350g dark chocolate chips
Taylor Swift’s Chai Sugar Cookies
For the cookies:
115g butter, softened
80ml vegetable oil
100g sugar
60g icing sugar
1tsp ginger
1tsp cinnamon
½tsp allspice
½tsp nutmeg
½tsp cardamom seeds
¼tsp cloves
Small pinch black pepper
1 egg
2tsp vanilla extract
250g plain flour
1tsp bicarbonate soda
Pinch salt
For the cinnamon sugar:
100g sugar
2tsp cinnamon
For the Glaze:
200g icing sugar
½tsp nutmeg
4tbsp milk

How long have you had a cooking channel on RUclips while still not knowing that allspice is its own thing?
Danny Trejo is, by all reports, a genuinely great guy with a somewhat checkered past. He is trying to leave the world better than he helped make it as a younger man and is apparently super nice and fun now.
I used to think the same thing about allspice. But: Allspice, also known as Jamaica pepper, myrtle pepper, pimenta, or pimento, is the dried unripe berry of Pimenta dioica, a midcanopy tree native to the Greater Antilles, southern Mexico, and Central America, now cultivated in many warm parts of the world.

@@elenasimon1270 Usually in stores you can buy a 'mixed spice' in those same little jars that is a premixed version of those first spices. That's probably what Barry was confusing the allspice with.

I stay watching an entire video because it never remains the same. So many videos are setup too professionally - set in a studio, using cinema-grade cameras, ridiculous lighting setups, and backgrounds that don't really represent anything.
Your videos are 'humanly professional'. The cameras sometimes handheld. The lighting works without looking like you spent 3 days setting it up. The background represents what the video is about AND it's evidently not just a show kitchen. Sometimes you cut to a clip of the dog, or family. Sometimes it's a clip of you in the car, or in the supermarket. It's comfortably unpredictable, and that's why it works.
So many channels have gone all-in on 'showtime' and have lost the human element. So many don't offer their opinions. So many don't offer one-liners. You've nailed the balance in your videos - please, never change the formula.

he's tried to change several times over the years, every time there massive backlash and he's changes back..
though i keep commenting and telling him if he needs someone to help him then they need to take the job knowing they need to imitate barry's "guy in his kitchen" style, and not try to turn him into a overly produced tv chef.
though at the same time i think barry tends to become more self conscious and he just acts differently when theres another person in the room, which is perfectly normal, but it's just another way his videos feel different when he brings someone else in to help.

Can confirm - Danny Trejo's cookbook rocks. I regularly make stuff from it - barbacoa, carne asada, roasted Cauliflower tacos, nacho donuts... there's tons of stuff that's really fun to try making.
Allspice ISN"T a mix of spices. It is a berry like pepper that comes from the Caribbean. The reason it is called "Allspice" is because the Spanish were looking for a faster way to get the spices from Asia and thought it tasted like a combination of the Asian spices. This was a way to market it to the people of Europe.

Allspice is ground up allspice berries, not a mixture of spices possibly you were thinking of mixed spice, which is similarly Christmas cakey

I've never really understood this. If it built naturally up to this point, why does begging people (mostly those who are already subscribed) make it happen faster? It's surely just going to happen normally like the rest of the subs?

Danny Trejo was only "Machete" in the Spy-Kids movies and his own spin off films. His most common character is "Frank".
though it's kinda funny he made the chewbacca noise when talking about the cream of tartar making the cookies chewy because Danny Trejo also cameoed as a rancor trainer in one of the newer star wars shows

Micro amounts of cayenne pepper is an old baker's hack to bring out more flavor notes from the chocolate. I use both that and brewed espresso in my chocolate chip cookies. The flour, butter, and sugar guarantee you don't get the heat from the cayenne at all. Just more chocolate flavor. 🍫

Pretty sure "chai" just means tea. What we call "chai" is actually masala chai, which translates as "mixed spice tea"
Proper allspice doesn't consist of those other spices but comes from the allspice berries.
The recipe with the sugar and the cookie dough and the cayenne pepper it's actually based on an ancient recipe Aztec and recipe they used to use that and chili peppers in the chocolate and it gave a warming sensation I'm not going to go into the recipe here you can look it up under Max Miller he gives a whole thing on it his thing is called tasting history.

as far as i understand it, atole is a Mexican chocolate-masa beverage, but Mexican hot chocolate refers to a hot chocolate drink containing spices and bittersweet chocolate

Just as a small Tangent, Chai just means Tea in India, and always makes me chuckle when I see Chai Tea on a menu (Literally translates to Tea Tea), It should really be called Masala Cookies.

That first recipe is exactly why you need a stand mixer. The gingerbread cookie I make at Christmas is thick like that. I couldn't make them without my Kitchen Aid stand mixer. Can't wait to try those Mexican hot chocolate cookies. We used to have a lovely crepe restaurant in our city that sold a lovely Mexican hot chocolate. (Sadly, they didn't survive the pandemic.)
The Taylor Swift recipe has a special place in my heart, I've made it loads of times since finding it on her Tumblr years ago, everyone I've made them for has really liked them

Allspice is not "all the spices", it's the ground-up seeds of the allspice berry. It might taste reminiscent of all the spices, but it is very much its own thing; If you've ever eaten real Jamaican jerk, you're mostly tasting allspice with some ginger and garlic.
Unfortunately, Danny Trejo is only 5'7", so, much too short to play a Wookkie... much less Chewbacca...

The best technique for the Mexican Hot Chocolate cookies is to put the cayenne pepper in The dough. I’ve been making a vegan cookie just like that and EVERYONE loves them.
For the Danny Trejo cookies: to get closer to the taste of Mexican hot chocolate, use piloncillo in place of other sugars. It's almost a mandatory thing with Mexicans I've met for atole (a tole aye) or champurrado. Not available by you? I've fooled my friends with brown sugar. 🤫
You need to be beating your butter WAAYYY longer. You said “that looks nice and fluffy now” but that wasn’t anywhere NEAR what butter looks like when it’s beaten until fluffy. It should be smooth and lighter in colour. Yours was still a deep yellow and chunky.
TBH I probably would use a wooden spoon for this after the basic butter and flour. Doing it by hand would weirdly be easier and would make a more tender cookie. (It's not a biscuit, Danny isn't from the UK)
Started watching your videos so many years ago (has it really been 13 years?) with my brother and sister. The dad jokes, the funny mustaches, and the recipes had us coming back for more everytime.
Now, at 29 years old, your videos remind me of a time when the 3 of us would sit together on the couch and watch MyVirginKitchen before trying to convince our dad to try to make what you were making. Thank you.
Hi Barry, great video, nice looking cookies, just one thing, everything info-related to the mexican drinks is all wrong😂 Atole is one thing, mexican hot chocolate is another and usually not spicy, that was more of an olden-days/aztec tradition. Regardless, the actual cookie itself looks delicious. Machete's recipe is very cool. Maybe you need to make a mexican hot drinks redemption video 😋 some ideas for you: Café de olla, atole, chocolate caliente and the traditional ponche for the holidays.

Chocolate chip cookies but you add in dry Vanilla pudding mix while mixing up the recipe.
Peanut butter banana cookies, just peanut butter cookies but with dry banana pudding mix into the mixture

Between him saying Mexican hot chocolate tastes like something you would give to a zoo animal and the Chewbacca remark I personally don't want to watch anymore of this. I don't care where you are from the way he is talking really rubs me the wrong way. I kind of get the impression he thinks Hispanic people are all Mexican but maybe that's just me. You should try Danny Trejos "trejo tacos" cookbook. Every recipe I have made from the book are simple but delicious! I am yet to try his donut recipes but he has both taco and donut restaurant sin the US

And there comes a time, like when adding chocolate chips, when you do it by hand. I've managed to pulverize ingredients using a hand mixer.
