No you cannot. Without meat it is not lasagna. You will have to call it by another name. Lasagna noodles and vegetables perhaps. I am sure that will bring people running to the table.

Sure. It gets a lot of salt from the pancetta though so if you make veggie, be sure to season well. Maybe add lots ot finely chopped mushrooms too.

Not really, just adds some richness to the sauce.

its NOT béchamel sauce with eggs in it 😏
