Hi Chef, I'm from India and we don't get tube or can based tomato paste so easily here. All we get is tomato puree in tetra packs. What can be the substitute for the paste in our case or can we cook out tomatoes on a stove till they are dry and then add them to make up for the paste part?

I had this soup as a first course at a Turkish restaurant recently and it's just unbelievably good. So hearty and satisfying, it almost made me wanna cancel my entree and order another bowl or two of soup instead!
J Dizzle, yes, lentil soup is the most popular and most beloved soup in Turkey! We drink this soup literally in every season and at any time of the day, even for breakfast, lol :)

How interesting! i'm from Syria (the middle-east) and we have similar dishes to this.
We do have lentils soup, yogurt soup and tomato soups... but I never seen all of them in one dish. which isnt a bad thing. I might try it, something new after all.
The only thing is, we definitely use mint but never fresh mint in soups, only dried. which gives a totally different flavor.

This is a variation of Turkish red lentil soup, bet this will taste good.
I've been making dal soups for 45 years, similar to this one. Red lentils are easiest to find in a mainstream market, along with brown and de Puy. But I've got chana, urad, masur, mung, toor. My original recipe came from "Lord Krishna's Cuisine," which is pretty definitive on vegetarian Indian cooking, very respectful of food and subtle, delicate flavors. I toss a few red bird peppers into mine. Chef is right, red lentils are very pretty. And they're so cheap, easy, and fast cooking. You should all try it!
Love this. Instead of the yogurt at the end, I added the lemon juice and lemon zest directly to the soup. Also added sunflower seeds when serving and a little nutmeg on top. Very easy and quick to make. This is going in my weekly rotation.
You have every reason to be excited. This is the best soup I've ever made/eaten (and I've made lots of great soups). I discovered your recipe four days ago and have made it twice since then. Such a delicious blend of flavours and balance of heat and sweet that I can't imagine anyone with taste buds not loving it. It's a meal in itself and as easy and enjoyable to prepare as it is to eat; the colours and aromas as it cooks are intoxicating. Thanks for posting another great recipe. This is my favorite Turkish recipe. I use diced onion and carrot in the first step, and skip the celery. I fully blend it before serving for a gorgeous warm orange color. We serve with a dash of dried crushed mint on top with a squeeze of lemon and drizzle of chili oil, instead of yogurt. Easy, fast, and always a show-stopper. I also recommend using pul biber (turkish aleppo pepper) in place of cayenne here. It gives it a deeper flavor you don't want to miss.

We call this as sambar in southern part of India. mix with rice.. yummy yummy.. sambar rice is our lunch menu. Use pressure cooker and 3-5 whistle, mix onion, tomato and any vegetables.
I have made this a total of three times. It’s perfect and so easy.
I'll try these with the green lentils that have been sitting in my pantry for a while now, and the mint growing on my balcony. Thanks Chef John.

I just made this and onto the yogurt dressing I also added the juice and the zest of a lime... This is BY FAR the most delicious soup I have ever tasted or made. I never knew lentil can be so yummy and the ingredients used in this soup are a no brainer, super cheap and basic but full of flavour, nutritious, delicious and comforting. I only made a small pot just in case I didn't like it, enough for 2-3 bowls... Guess who's making more tomorrow? :) ... Thanks Chef John, you're awesome!!!
Edit: I just re-made this soup in a huge pot, my husband that is not into soups, absolutely loves this soup, so that tells a lot! Yummy and easy to make goodness! :)

In Egypt we make orange lentil soup but we just boil everything together then blend it smooth. I tried Browning the onions first with tomato sauce as chef John did and it added a very sweet and delicious undertone. I added tomatoes too and a little bit of paprika and it was absolutely wonderful! Thank u chef

Didn't follow the recipe exactly since I have dairy allergies but WOW who's is such a great take on Dhal soup. It's amazing how much timing and carmelizing can make a huge difference.

For those interested, Country Crock has some great plant based butters available now- in stick form. I love using Miyoko’s butter, but I only buy it when it’s on sale- which is not often, or I’m just not catching it on the sale dates. I only use it when I’m trying to perfect my Mac & Cheese recipe- - I know, it’s a hopeless battle😢

That's awesome! I make one that is quite similar to this, although I use a can of crushed tomatoes instead of paste, toss in an anchovy during the saute phase (adds a lot of umami) and throw in chunks of ham. I might have to get some red lentils and try that mint yogurt as well.

I make a chicken and lentil stew and have used all of the above discussed lentils before. I truly think the red lentils are the best and not just because of the color. The others seem to impart a 'grittiness' to my stew that the red ones don't. I'll have to try this recipe because it not only looks good but also very simple! I just made this soup with vegetable broth and it is still good!! The lemon mint yogurt must be tried! This is my fifth of Chef John’s soup recipes. First one was cream of asparagus and it was good! Second one was cauliflower soup and it was good! Third one was Spanish garlic soup and it WAS bad. Fourth one was butternut squash soup and it was good!!

I’ve made a lot of lentil soups and this is by far the best I’ve ever made. I followed the recipe to the letter, save that I added quite a lot of water at the end because it was too salty for my taste. Definitely will use low-sodium broth or plain water next time.
It’s also fantastic served cold. Don’t forget some slices of toasted pita, too.

I only had Beluga or Indianhead lentils (although I was absolutely certain that there had to be some red ones in the cupboard.) but went at it anyway. Yes, the color is not the strong point of that dish then, but it tastes amazing.
