Peeled beans (you can find in Afro soft) wash the beans and soak for an hour to get rid of the skin and blend with water until smooth and thick in consistency add water if it’s too thick then chop scotch bonnet and onions into the batter and mix with maggi cube seasoning and fry in spoon sections (if that makes sense) x

omg i love akara, Im afro latina (BR and PR) and in Brazil we also eat Akara but basically stuff it like a sandwich mostly lmao. I have had ghanaian and nigerian akara (or Kose) and absolutely loved it. Though, the nigerian one i tried is closer to what we make. The ghanaian Kose (akara) i tried was a big grey in the inside and according to my friend her tribe add in this spice called kawe (dont know if thats how its spelled) to give it that colour. Both versions were absolutely delicious

My brazilian side has Nagos heritage (literally the reason for my name lol) and many even spoke yoruba (probably with a different dialiect) and followed yoruba traditions e.g. spirituality etc. More than 30 yrs ago there was even our own version of "year of return" were a lot of Nagos Brazilians actually chose to relocate to nigeria. I grew up eating Akara, which we call Acarajé and always loved it lol during my vegan phase i was almost eating it everyday.
I am Ghanaian, and it's really refreshing to see someone of another culture enjoy a dish that's not typically as popular as some of our foods. I find it amazing that Acaraje sounds so similar to Akara too!
It's interesting that "akara" or "acaraje" has its roots from Yoruba while "kosai" or "koose" from Hausa, both languages found in Nigeria. I heard dendê oil is used in Brazil, which is interesting because akara is most commonly fried in vegetable oil in Nigeria. The version of akara that uses palm oil is referred to as "akara elepo" or "akara Osu" which is named after the small town of Osu. This version of akara has a crispier exterior due to the palm oil used, which is why I reckon this version of akara is more close in taste and texture to the Brazilian version which also uses palm oil.
Back to cleaning pans Chidi. Jason's looked fluffy inside. I make mine with blended skinned brown beans we call Drum in Nigeria. It gives it a congealed texture thats fluffy - the trick is to put just enough water for a thick yoghurt like consistency. Dice onion and fiery fresh chillies after blending or mashing. I bought some at roadside today and all the Akara sellers used traditional pounded yam morter and pestle. Try adding a hint of passata and sliced ladies fingers/ okra. Sublime!
