    Today, I made a madeleine full of Earl Gray flavor.
    It was soft and moist, and the earl gray flavor spread in my mouth, and the taste was so good.
    Try it with warm milk.
    ▶ Ingredients (12 madeleines)
    □ Heavy cream 20g
    □ Earl gray tea 4g
    □ Unsalted butter 90g
    □ Egg 85g
    □ Sugar 78g
    □ Salt 2g
    □ Vanilla extract 3g
    □ Honey 10g
    □ Soft flour 90g
    □ Baking powder 2g
    □ Water 20g
    □ Earl gray tea 2g
    □ Powdered sugar 60g
    ▶ Please read before making.
    ○ Eggs are stored at room temperature for at least 2 hours before use.
    ○ Heat the heavy cream in the microwave.
    ○ Melt the unsalted butter in the microwave for 10 seconds at a time.
    ○ I used a tea bag for earl gray tea.
    ○ Prepare water for glaze at 80 degrees.
    If you use water that is too hot, the astringent taste of Earl Grey will be felt strongly.
    ▶ Making Earl Gray Madeleines
    ① Add earl gray tea powder to heavy cream and mix.
    ② Spread enough butter on the madeleine pan.
    ③ Add sugar salt to eggs and mix.
    ④ Add vanilla extract and honey and mix.
    ⑤ Add the flour and baking powder and mix.
    ⑥ Add melted butter (40-60 degrees) and mix.
    ⑦ Add the heavy cream brewed with earl gray tea and mix.
    ⑧ Let the dough rest in the refrigerator for 1 hour or more.
    ⑨ Pan the 90% dough in the prepared pan, and bake at 200 degrees for 5 minutes → 180 degrees for 5 minutes.
    ▶ Making Earl Gray Glaze
    ① Brew earl gray tea in 80 degree water.
    ② Remove the tea bag, add powdered sugar and mix.
    ③ Apply a thin layer while the madeleines are warm.
