It's for bringing the temperature down and stop the cooking so the pasta won't be loosened and it is ok since this dish isn't pasta it's mac and cheese. The sauce itself is sticky enough it has a lot of cheese and it's hot so you don't need the sticky starch on the cooked pasta to absorb the normal sauce you make.

I initially came to the comments to see how many other people commented on the interesting cutting techniques and the fact it was Barilla pasta. I was overwhelmed by the lack of such comments that it made me think twice. Even if the chef/sous chef did not attend the Culinary Institute of America or some other prestigious culinary school, or even had any higher education for that matter, who am I to judge? The fact is, everything that was presented here looks amazing. I can only imagine it tastes just as amazing as it looks. So to whomever you are doing the work in the kitchen, I sincerely apologize for my initial lack of judgement, or quite the opposite actually. While I'm sitting here on my ass you are clearly doing something you are passionate about. Kudos to you for that. I wish you nothing but the best in everything you do.

i used jalapenos, yellow bell peppers, onion, bacon bits and green chiles in mine, also tony chachere's seasoning and garlic salt...i cooked andouille sausage seperate, then it added to the macarni and cheese...it was good 🙂

I’d never order this or any else “Cajun” unless it’s in the south actually, only if it’s in Louisiana. You won’t get the real thing elsewhere.
