Cinnamon Swirl Bread In The Regal Bread Machine--PART 1

  • In this video I demonstrate how I make my homemade cinnamon swirl bread entirely in my bread machine. There is only a small amount of hands-on work to make this delicious bread! I hope you give it a try. :) Sorry for the abrupt end to this video, my camera decided to turn off suddenly. :( PLEASE continue with Part 2 to see the end result. For best results, make sure all ingredients are room temperature. Here is my recipe for the bread:
    Cinnamon Swirl Bread Machine Bread
    (Makes a 1lb Loaf)
    3/4 c. Buttermilk
    1 Egg
    2 t. Unsalted Butter
    1 c. Bread Flour
    1 c. Whole Wheat Pastry Flour
    1 T. Honey
    3/4 t. Salt
    1 t. Ground Cinnamon
    1 t. Active Dry Yeast
    Filling:
    3 T. Light Brown Sugar
    2 t. Ground Cinnamon
    1 T. A.P. or Bread Flour
    *Optional--1/2 c. Raisins
    (Mix filling ingredients in a small bowl and set aside until ready to fill the dough.)
    Begin by adding liquid/wet ingredients to the bread machine loaf pan. Add all remaining ingredients, adding the yeast last. Place pan into bread machine and run on "dough" cycle. **Check the dough's progress during the first few minutes of the mixing cycle to make sure texture is correct. If it looks very shaggy with lots of flour along the sides of the pan, add a little water, 1 T. at a time, letting dough absorb it before adding more. If it's too wet and looks more like batter than dough, add a little bit more flour, 1T. at a time and allow the machine to work it in before adding more, until it looks smooth and pulls together into a ball. When cycle is complete, remove dough to a well floured work surface. Using floured hands, gently pat dough out to a rectangle approximately 12-14" long. Use a rolling pin if needed to roll dough a bit thinner. Sprinkle filling evenly over dough spreading with your hands. Starting at the short end, tightly roll up, tucking in side edges as you go. Seal edges together. Turn rolled dough over so seam is on the bottom. Pinch ends and tuck them under loaf. Remove paddle from bread pan and lightly spray post with cooking spray. Using both hands, lower the dough into the pan and gently pat it towards the corners. Return pan to bread machine but DO NOT plug it in! Close lid and allow dough to rise for 45-60 minutes or until doubled in size. After dough has risen, plug machine in and use the "bake" cycle to finish loaf, about 60 minutes. When bread is done, remove from pan and allow to cool on cooling rack for at least 30 minutes before slicing. This may take a fair amount of willpower! :D I hope you give this recipe a try, it is delicious!!

    Just made this with bread flour. I doubled the recipe. Half was made in the bread machine and half in the oven. Both loaves came out great! I didn't use buttermilk, as I didn't have any. So I used regular whole milk with great results. Thanks so much for this recipe. All the other bread machine recipes chew up the raisins or leave them whole and burnt on the outside.

      Isn't it good? So glad you like it! :-) Yes, rolling the dough flat and spiraling the raisins/filling makes a big difference in the outcome. it's an extra step, especially when using a bread machine but the payoff is high. :D Thanks for watching and letting me know how it came out! :)

    I have a suggestion, if the bread gets a little stale, you can use it for french toast!

      I usually just cut the loaf in half if I'm not going to finish it quickly and put half in the freezer in a freezer bag where it keeps until I get around to it. Don't want to keep it frozen for long, a couple of weeks from experience does not damage I can tell. Do the same when I make long Italian bread in the oven two or three loafs at a time. (Use the machine to mix it and everything else by hand.)

    These are two excellent videos. I've been making the dough for my cinnamon bread in the bread machine but baking in the oven. It never crossed my mind that I could put the dough back into the bread machine to bake after adding the cinnamon mix and rolling it up in the dough. That's perfect for a hot summer day when I don't want to turn on my oven. Also, adding a little flour to the cinnamon mix and leaving the butter out just might fix the problem I have with the gaps in the baked bread around the cinnamon swirl. I do have one question. I thought that ml was for liquid measure and grams was for dry measure. All my recipes use grams for the dry measures and my bread flour is 120 grams per cup. Did you just measure your ingredients, then weigh them on your scale, using the ml setting?

      In the video I used measuring cups and spoons. When listing the recipe I included both imperial and metric measurements. To do the actual baking in the bread machine, it must have an independent bake-only cycle. Thanks for watching! :)

    I have to master the mix and the rolling techinique. mixed results. some times good some times space. I tried it with butter . i think that might have been the problem Next time I will try without. and not roll it so thin. I was tryig to get more of a sworl

      Yes, I have trouble also when I spread butter on the rolled dough. All my filling ingredients slide around and end up at the bottom of the loaf and can burn with all the sugar and raisins. I eliminated the butter and now everything stays where I put it. Hope this helps. :)

    now that I have an understanding of basic white and wheat loafs. I want to try this again. Howeve rI cannot find th Whole Wheat pastry flour. can I use something else?

      You can use all whole wheat or all white or bread flour. I add whole wheat pastry flour for added fiber and I prefer the texture better than regular whole wheat. You can certainly use regular whole wheat mixed with bread flour.

    Could you use whole wheat flour instead of bread flour?

      In my recipe I use half bread flour and half whole wheat pastry flour. You can certainly use all whole wheat flour if you like. The finished bread might not be risen quite as high but it's very doable. Thanks for watching! :)

    So I followed the basic I instructions, but machine needed raised.but it never went on bake. So I figured Idid something wrong.when I turned it on.can you be more precise on turning it on basic white bread.mine wasn't baking.so I shut off and restarted to bake.but it came up the number 10.which should of been 3 :00, which means three hrs.but I done that wrong it wasn't heating.so I took out and baked in oven.them after it was out I played with it and finally got it to bake and heat came on.

      Some bread machines need to be reset before switching to another function, like from the "dough cycle" to the "bake only cycle". Mine does that too if I don't push the "off" button before unplugging it even if the dough rising cycle is finished. So now I make sure to always press the "off" button before unplugging the machine to put it away. Hope this helps. :)

    The “Bake” function on my KBS bread maker is only 10 min. How long do you think I should bake a 1000g loaf?

      Really? Usually the bake-only cycle on most bread machines is 1 hour long.

      @@helpfulnatural Yes, very weird. Looks like I have to manually add minutes if I don't want only 10 min. So if I use the raw function and then let it sit for 1 hour, how long should I use the bake function, 1 hour? Or does that time vary?

      @@spalacios9058 After your dough has risen, place the pan back into the machine. All of my bread machines both past and present have a 1 hour bake cycle. I think it's because you are not preheating it like you would with an oven. So starting from raw dough you would bake for 1 hour. Hope this helps.

    How did you get more swirls in the first loaf compared to the second one?

      If you mean instead of bread flour, yes you can use all-purpose flour. Bread flour has a bit more protein for rising and good chew but all-purpose works very well too. Thanks for watching! :)

    Mines capable of 3 pounds but so far I don’t even need to make a 3 pound batch cause it rises a 2 pound into a 3 pound lol.

      my ingredients might be slightly different. Like using regular bread flour for now. How many times do you let it rise. Seems twice. I did regular bread and it rose 3 times. for white bread.

    I think the instructions are a little off, if I’m wrong, I apologize. After you put all the ingredients and start the machine, when the machine completes the dough cycle, what do you do? Reading your step by step, I think you miss the part where you just let it sit in the bread machine and let it rise, correct? I think you’re supposed to let it sit for 45-60 min THEN you pull it out to add the cinnamon mix. Please let me know if I’m reading this wrong, thank you.

      The bread machine does all the rising during the dough cycle. The last rising is done after you have rolled out the dough, added filling, then rolled it up and placed back in the machine BEFORE using the bake cycle.

      @@helpfulnatural Thank you for the reply. Let me make sure I understand this. I put all the ingredients into the machine. Then when its done mixing it all together, I don't let it sit and rise? Instead, after its done mixing, I pull it out, roll it out, add filling, place it back into the machine and then let it rise for 45-60 minute? Then I hit bake? Sorry for my ignorance.
