Also, I made it with medium tofu and the texture was identical to salmon’s and the colour was almost through and through. Happy that you have discovered it !
Only dip ONE side of the nori in the marinate. The dipped side goes against the tofu. The dipped side goes faces out to better mimic the look of salmon skin, and the fillets won’t look so pink

I love this recipe and have made it using 1 teaspoon beet powder, because then I always have the ingredients to make it in the house. I added a little caper brine too and marinated overnight. I love your addition of kelp powder.
This does look amazing, I used to love salmon... I would personally pre-freeze the tofu and also add some olive oil and/or flaxseed oil to the marinade, salmon is an oily fish after all. Also gives you that omega3 😚 Another idea is to actually cook it in the marinade to make the colour penetrate further into the tofu.

I really like the chopstick technique and using nori and kelp powder. I like to use smoked hickory concentrate a lot, it should work here for those who like a little smoke. BBQ beet is awesome and would work here well. Beet powder is easier to use if you’re just wanting color. Mix a pinch with water, squeeze of orange, aromatic bitters and ice for a quick easy Mocktail (I call them chillers). (The bitters of course is alcohol but it’s like adding vanilla, it’s a few drops of flavor bomb, not intoxicating.)

Anyway, I'm not sure if you're familiar with the channel Health Origins here on YT. A lot of the recipes there also seem doable. It might be fun to try out her version of vegan ham (maybe the one without okara). If you use gram flour, it'll probably be like an updated/upgraded version of the chickpea tofu you did some time ago. Her vegan creme brulee might also be nice to try. Anyway, stay awesome and keep well!
I am not going to lie: I knew this was going to be Sam's tofu salmon and although extraordinary, I have no doubt it would not persuade any avid salmon lovers (or tofu haters ;P). BUT it looks absolutely amazing regardless and it is simply an awesome, unique way to make tofu fun and interesting! I think I might actually give this a go to switch things up :D Plus, so far I have not been disappointed by any of Sam's recipes and a variation of her seitan Italian meatballs has even become a staple of mine! . I never liked salmon, it was too strong of a flavor for me. I wonder what other things you could add for flavor. It looked good and I'm glad the taste was also. I do like the backed teriyaki tofu you can buy in the stores but it is kind of expensive so I decided to try and make it myself. I finally got it right and it turned out great, now I can make it whenever I want and it is so much CHEAPER, I love to save money.
Returning to report! I tried Sam's recipe for dinner tonight. IT WAS DELICIOUS! I'm proud to say that my salmon looked just like her picture. (Actually, I'm very surprised it did LOL) So, thank you Rose! I'
I really want to try this but i cant find the powdered kelp/kombu anywhere. Would another seaweed be just as flav'ful or does it have to be kelp? Hijiki and wakame come in spaghetti like strands so if that works it would be easy to pulverise it down to a powder. Kelp is gelatinous but i dont think thats what you are aiming for in this recipe.
Thanks for the recipe. Just to brain 🧠 storm... I think if we make the wet mixture, then make our own tofu... Before we add acid that separate the whey and tufo, we add the wet mixture? If that is possible I'm thinking it would help by giving more flavor and more realistic look 🤔 your thoughts 🤔?
I give a weight measurement too if that helps. The beet is mainly just for color, so if you use too much the salmon will look intensely red and maybe kinda scary! Haha

Love the suggestions! I think cooking it with the oil gave it that fattiness of salmon as well! But I like the idea of flaxseed oil!

Make that sesame oil - I swear it helps so much with the fishiness! Learned that from Rose's tomato "tuna" recipe, which is ridiculously amazing 🤤

I find that dill tastes really fishy. So maybe that will work if you don’t have kelp powder like me
