SPICY EGGPLANT WITH SALTED FISH AND MINCED PORK IN CHINESE STYLE | CH SECRET RECIPES

  • This spicy Chinese eggplant with salted fish is a dish with a touch of sweetness and saltiness. The key is frying the eggplants till lightly golden brown then cooking them in a flavour-packed meat (minced pork) and salted fish. That's when the flavours really shine with the help of well-balanced seasoning.
    INGREDIENTS
    Eggplant - 500g
    Cooking Oil
    Minced Garlic - 15g
    Spring Onions - 10g
    Ginger - 15g
    Chili - 2-3 pcs
    Salted Fish - 50g
    Minced Pork - 300g
    Brown Sugar - 2tsp
    Hoisin Sauce - 1 tbsp
    Dark Soy Sauce - 2 tsp
    Spring Onions (Garnish) - 10g
    PROCEDURE
    1. Peel and slice the eggplant
    2. Fry the eggplant until slightly brown
    3. In the same pan, sauté the ginger, spring onions, minced garlic and chili.
    4. Add the salted fish and minced pork
    5. Stir fry for seven minutes then add the hoisin sauce.
    6. Season with brown sugar and dark soy sauce.
    7. Then add the fried eggplant
    8. Stir fry for another 5 minutes
    9. Serve with rice.
