Ingredients:
- 150g Kefir or Liquid Yogurt
- ½ tsp. salt
- ½ tsp. baking powder
- 2 tsp. brown sugar
- 30ml olive oil (or canola oil)
- 250-300g all-purpose flour (flour amount will vary according to the kefir)
Method:
1. Mix: In a large mixing bowl, combine the kefir, salt, brown sugar, olive oil, and baking powder. Stir until smooth.
2. Add Flour: Gradually add 250-300g of flour to the wet mixture, starting with 250g. Use a spatula to mix until the dough starts to come together.
3. Knead the Dough: Once the dough has formed, use your hands to knead it in the bowl or on a lightly floured surface until it becomes smooth and soft, forming a ball. If the dough is too sticky, add a little more flour.
4. Rest the Dough: Cover the dough with a clean cloth or plastic wrap and let it rest for 15 minutes.
5. Divide and Roll: After resting, divide the dough into 4 equal parts. Roll each piece into a ball, then use a rolling pin to flatten each one into a disc, about 1-3mm thick.
6. Cook the Flatbreads: Heat a non-stick skillet or griddle over medium heat. Cook each flatbread for 2-3 minutes per side, turning regularly, until both sides are golden brown and cooked through.
7. Serve: Once cooked, transfer the flatbreads to a clean cloth to keep them warm. Serve immediately or store in an airtight container.
