Excellent recipe. I modified it bit (just because I can't leave a recipe alone). Instead of American Mustard, I used Dijon for the "glue" and instead of prepared Chili powder, I made my own by whizzing a bunch of dried chili peppers. You get a nice powder but you also get little bits of the chili seeds. Gives a nice bite! Once the ribs were glued and rubbed, they were wrapped in cellophane and refrigerated for 24 hours before cooking.

I don't either. When doing Pork Butt. I put the rub straight onto the meat. But I just like the taste of mustard. And I don't always do ribs with Mustard. This is one method and it tastes awesome.

I'm all about outdoor cooking.
