    As a mexican, I totally approve this... all of this. The guacamole, the pico de gallo (wich is a must) and the tortillas (even if this ones are not made of corn, in México we also eat it with the ones made of flour). The sour cream it's something more from the USA, but this recipe it's one of the most heart warming and accurate to the real thing, that even I will try (I always use beer, salt, pepper and some worcestershire sauce, but I have never try that amount of spices!). Thank you soooo much for not using hard shell tacos :'), those are embarrassing and give a wrong image to the mexican cuisine.

    DJ BBQ, you are so freaking awesome!!! Thanks for sharing all of your radness! I just did this in an electric skillet and at the end, I used 1 cup of sake to de-glaze all of the goodness from the skillet. I can't wait to try the recipe on a grill!

    My girlfriend makes the chicken for our Fajitas in much the same way, only she cooks/boils the chicken on low heat in the beer and spice mix and when its tender and delicious she pulls it apart like you do with pulled pork. If you don't have a grill handy, try it this way. The beer and spice mix ends up being a delicious thick sauce.

    This is freakin awesome! The guacamole is the best thing about it and if you let the chicken rest in the spices overnight it's unbeatable.
    This is my go to fajita recipe now.

    I'm mexican, we never never never never use cayenne peper or smoked paprika, by the way your recipe looks so tasty, i wanna try it next weekend. Try to make a rub with dried habanero pepper (extremely hot but really man, they've an awesome flavour), salt, pepper, orange juice (just a little), black pepper and olive oil and let it marinade overnight (maybe 2 - 4 hrs if you're hungry). And for an authentic "salsa" try to cook tomatoes, chili (serrano, habanero, etc) and onions directly to hight heat and latter mashed it in a "molcajete" (it's like a mortar"), salt to taste and dried oregano, that's all, never use lemon.... great chanel! greetings from mexico

    Anyone for a rainbow? Love those peppers!
    My favorite easy "go to" fajita/soft taco using a flour tortilla is blackened fish (with easy to find Tilapia or harder to find, Grouper) I very lightly brown the tortilla quickly in butter in a pan until it is puffy. I coat it with Aioli sauce, then the fish, and top with cucumber which I make into long thin noodles with a Julienne peeler (LOVE that gadget!) discarding the center seeds. Sooo good and sooo simple, but very messy. It is one of those things I make and eat when no one else is around! :)) haha

      DJ BBQ Oh yeah, that looked great. I make the same mango salsa but add a jalapeno pepper to it. I sideline my blackened fish with it but haven't tried it in the taco. SOUNDS GREAT and will be on the family menu soon.... :)))

    I will try to make a video of this cool recipie!
    You need a large white onion
    Tomato paste,we call it consome de tomate.
    The juice of 5 limes,salt&pepper. And some aluminum foil.
    Peel the onion and with a core remover(the ones you use for apples)make a small hole on the top of the onion.
    Mix the tomato paste and the juice of the limes with seasoning in a cup and pour it inside the onion.
    And then return the piece of onion you took with the core remover back on.wrap it in aluminum foil and put it close but no touching the coal for 20 minutes.
    Remove the Foil and cut on a plate and it will break down to be juicy "Cebolla Asada"

    Hey! As usual, love you and your take on this recipe. A few tips for you to try from a Mexican ;) lower on the cumin a bit and add a pinch of oregano. Always good! Also, good "pico de gallo" always has chili in it, particularly green =) hope you like my tips and keep these videos coming! You're my favourite on FoodTube!

    good pico de gallo recipe - if you're gonna try it, don't forget to de-seed the tomatoes (otherwise it's far too liquid-y for a fajita)

      I usually wrap em in aluminum foil. But I thought I'd do a quick blast on the grill. But, trying to talk to the camera and cook.....well, things take time and sometimes they burn. My bad.

      Non alcoholic beer. You can use cola, root beer, apple juice....loads of beverages can work. Experiment

      you can marinate chicken in yogurt, lemon juice and some fresh cut herbs to your taste. adds a great flavor!

    Nice recipe! I usually put some grated cheese on top of mine, then stick em in the oven until the cheese is melted, and the tortilla crispy. Mmm.

      DJ BBQ You could probably actually stick them on the BBQ on the cold side as well, if you want em to crisp up. Smokey crispy tortillas? Why not.

    Try chopped bacon mixed in with the chicken. Keeps the chicken moist and totally accents the flavor.

    hey dj bbq oh man.. i tried this... smh.. awesome.. minus the guacomole.. i dont eat avocados.. :( ..but the pico de gallo..or pico de rado as u say i didnt really spice it up too much.. those peppers will kill me.. hehe.. for the most part i did add some heat to it.. this great ty so much. question have u made any tasty sides w/ your bbq.. like a casserole..mac and cheese.. something.. i havent seen that yet.

      I've done a couple sides like Woodstock Dan's Green Beans, but I need to do more. I want to do my Momma's Green bean casserole. I also do Mac and Cheese balls. I'll get working on some sides for ya.

    Cook some spicy mexican chroizo out of the casing and cook the vegetables in the chorizo fat, then sprinkle the cooked sausage on the fajitas after.

      You can easily do this recipe on your stove. And, you can cook your chicken in a pan, griddle or in the oven. Use what you got.
