a tip for Julien’s creme brulee: the simmering was to allow the arrowroot powder to thicken the liquid. if you let it simmer for a few minutes and put it in the fridge for longer, you’ll get a texture more consistent with regular creme brulee. proud of you!

Hey Chef, wanted to give ya hint when using cornstarch as a thickener like that in vegan creams. If you whisk the cornstarch into the cold coconut milk it will disperse better before you heat it on the stove. Also, for cornstarch to fully thicken a liquid and gel it has to reach a full boil for like a minute. boiling is what will thicken it, the fridge wont thicken the cornstarch liquid any further unless it has hit the boiling point before its chilled. love these vids!
skycub99 actually that was my thought. You needed to simmer so the arrowroot powder can thicken. Doesn’t matter even if left in fridge over a week. Did not come to simmer or let simmer for any time. I’m sure it still tasted good.
this entire recipe confused me because ive heard that arrowroot isnt supposed to be used at high temp because it could break down, so you shouldnt really boil it, vs cornstarch which only thickens after boil...
Hey I have a question about cornstarch and you seem like someone who knows what they're doing. Does it work with powdered versions of milk? And if it does, does the powder to water ratio play a role in how well the starch works?
@@mayasabboh7205 cornstarch can thicken anything, even just straight up water on its own. just add the milk powder first to desired milkiness, dissolve some cornstarch in a separate dish with some water (to avoid clumps), add cornstarch mixture into milk and then boil until thickened
the entire video after he takes them out of the fridge is so weird to me because he didnt bake it! it wouldnt have been nearly as thin if he did. it's basically just raw custard

the trick to getting an even brulee is to tap the sides of the dish to even out the sugar dispersement before hitting it with the torch. also, slow movements with the torch work better, as long as you move around as soon as it gets golden. used to make these at work and it was always so satisfying

as a former chef, that crust looks really good for your first time ever! some tips: next time use sanding/decorative sugar and a smaller flame. the larger granules of sanding sugar give a more even crust and the smaller flame gives you more time for all of the sugar to melt evenly

I loved watching how proud Jenna was to see her friend chefing so well.
Small tip: the reason you simmer the liquid is so the starch component (arrowroot powder in this case) gets activated and the „custard“ thickens up when it cools. So i think it would have been a thicker consistency that way. The recipe looks awesome!
Basically, when a recipe says cook for one minute and simmer, that means you let the mixture simmer and then once it's simmering, you start a one minute timer. :)

As a non-vegan who had similar struggles her first time using full fat coconut milk earlier this week, it really made me feel better that Julien also struggled to get it out of the can.
Unless the recipe you're using requires the fat to be separated from the milk, shake the can!! It takes a hot minute but it eventually mixes together for easier pouring.
If the can is unopened, don't store it in the fridge (honestly, no store keeps it refrigerated anyway, so why would you at home), just in a cupboard or whereever room-temperature and then shake before use. But if the recipe calls for just the thick part, flip the can with the opener down, put it in the fridge overnight, next day flip the can upright, pour out the liquid, scoop out the cream and there you go. Minimum mess. :D
