I worked at a Japanese restaurant and I just want to say, you’re supposed to put a thin layer of rice over the entire sheet of nori except for the 1/2 inch you wet to stick it together after rolling it. Your way obviously works fine but the original way is to cover the whole sheet. It helps it all stick together better and has a more aesthetic outcome.
Mine always fall apart when I do it the right way though 😖.

So many people are scared and intimidated by sushi because they know how much time and effort sushi chefs put into perfecting the art form of sushi making. Julien is simply showing that there's no need to be scared because making it in it's simplest form is actually much easier than people think. It may not be authentic but it's still tasty and a lot of fun.

@Kate F no they ment taking a damp hand-towel and whipping the knife off after every cut to make it a easier process
And with a sharp knife, you can cut with a single stroke instead of sawing. It gives a cleaner cut.
Tbh, you just need knife skills, I make sushi for a living and I can cut sushi with a plastic knife, ofc a sharper knife and same water makes it easier, just saying 🤷🏻♂️
