    In this video, I want to teach you about emotional intelligence and talk about some different aspects of emotional intelligence, as well as what you can do to make sure you have the correct emotional intelligence on the cook line. Emotional intelligence is extremely useful because it is part of the secret sauce that makes line cooks really great at what line cooks do , every Executive Chef knows how to keep their calm on the cook line, and the way they do that is through utilizing patience and emotional intelligence to make sure things are running smoothly and to keep everybody’s head in the game.

    Another great video. I’ve been in numerous boiling point situations and even had to deal with massive fights and frustrations before and can tell you that it’s just unfortunately part of the territory it comes in that line of work. Long hours, long ticket times, stressed out from lack of a break, pushy customers, etc. been there and done that. All you can do is try to do the best you can in those situations.

    Great content! Been following you for a while and this is one of my favorite videos so far. I just started working as a line cook in my fifties. I wouldn't have had the heart or thick skin for it when I was younger. Co-workers can be brutal, brutally honest and break your balls no matter how good or bad you are at the job. It is immensely helpful to have a good sense of humor, know your strengths and weaknesses and have the ability to take a joke. Striking that balance between confidence and humilty. Your channel helped a lot. Keep it up and all the best!

    Great video! My Favorite is after a busy Saturday night and we’ve set a new sales record! It’s high 5’s around the house! And What a Rush!
    Struggling with wanting to bring in fresh ingredients but keep hearing “it’s too expensive”.
    I can taste the difference between fresh and processed and I know guests can too.
    How can I Wow my guests and keep the cost down using fresher ingredients?

      To be honest, the “it’s too expensive” is nonsense. Try having them test it out to see how it goes for a week or two…

    When I first started, I was hired on as a dishwasher/ prep cook. Although my job varies from day to day. My first week, I had to wait tables. Call it baptism by fire. But now, over a year later I have been able to run the line, as well as serve and wait tables and bartend. My tism kinda helps with that though.

    I don't quite understand why empathy is a bad word in reference to the Boomer generation, which I am not a part of, but still had me scratching my head.
