It has been some time since I commented on your videos. I have been busy, working as a chef, still, of course. I have been steering up a hotel and restaurant as a Sous Chef currently. But, moving on to a Michelin Recommended venue. Mainly fish and shellfish (ALL fresh and local). But. I have held positions prior, as a Head Chef. I push certain individuals not because I hate them, but because I see potential in them. Yes, they will hate me, BUT, in time, they will understand why I did what I did, just like others did to me in the past when I was new.
My current chef is grooming me for leadership, AND he's a micromanager lol 🤣🤡
I would love to see a video on taking my skills to the next level. I am a basic bar/restaurant line cook and have been for almost 3 years in 2 different kitchens. I have learned a lot over that time from anyone I can but I would like to level up my general knowledge and skills. I do all of the basics but i still feel like a beginner. Are there any books or resources you would recommend for a broke beginner trying to make their way in the cooking world? I appreciate your content. Thank you.

Network and ask around in your area or travel. Make things you like to make and/or try to improve them the way you like. Learn about flavor balancing, gastronomy, etc. The food service industry is huge….
