    I think this is what we used to call _rice a riso_ back in the 1960s. It doesn’t appear to exist these days so thanks for the recipe. I’ve been experimenting with orzo for several weeks now and will definitely try dry frying it first now. Many thanks...

    Toasting half of the orzo is a terrific idea! It does look good with the 2 colors.

      Hi! Orzo is semolina pasta. If you use it in soups, it will require a parboil.
