One Pot Chicken and Orzo
Ingredients
5-6 boneless, skinless chicken thighs
4 garlic cloves, minced
1 pint grape or cherry tomatoes, sliced
2 cups orzo
4 cups chicken broth
1/4 cup lemon juice
Zest of 1 lemon
1 bunch kale, stems removed and chopped
(can substitute 4 cups baby spinach)
3 tablespoons olive oil
Extra lemon wedges
Directions
Season chicken on both sides with salt and pepper. Heat oil in a pan over medium high heat and sear chicken for 4 minutes on each side. Remove and set aside.
Add tomatoes and garlic, season with salt and cook for 2 minutes.
Add orzo and a little bit more oil and cook for another minute.
Add chicken broth, lemon juice and lemon zest and season really well with salt and pepper.
Return the chicken back to the pan and bring to a boil. Cover and let simmer over medium low heat for 12 minutes.
Remove chicken and stir in kale and olive oil. Adjust seasoning with salt and pepper if needed and continue to cook for another 2 minutes. Return the chicken back to the pan and sprinkle each piece with a little bit of salt, pepper and lemon juice.

Wait why did u use a diff pan the juice n brown bits from searing chicken adds GREAT flavor
Hi! Sometimes I wipe my pan clean if I see black burnt bits. Agreed it does add great flavor but if it’s too burnt I don’t want to risk it turning everything bitter ☺️.

What happened to the juices and fond in the pan from browning the chicken?
Hi! Feel free to leave them in. Personally I tend to clean my pan often after I sear to prevent the burnt/charred pieces from giving the rest of the dish a bitter flavor☺️.
