I'd never tried homemade pesto, but always thought the store-bought pesto was really poor, so bought some cheap ingredients: spinach, peanuts, garlic and believe it or not mozzarella. A sin to any Italian I bet, but I was blown away. I'll try more expensive ingredients in the future, but even the poor mans version was incredible (basil isn't the easiest to come by in Denmark, and nuts are pricey, except peanuts for some reason. And don't get me started on cheese prices lol)
Oh, and this will go excellent with homemade pasta that I've been experimenting with, which is also something Italians would find weird, as it's mostly just oat flour. 3 deciliter oats in a foodprocessor plus half a deciliter of regular flour (for gluten), and water. Doesn't really need much kneading or rest since it'll just become gnocchi or cavatelli and cooked right away.

Hey!.. So, if I wanted a little creamy pesto, do I add the heavy cream when you're heating up the pesto in the pan or after the pasta is added? I thought maybe you add it while is being mixed in the food processor.
You can add it along with the pasta. As you toss it altogether it will create a creamy pesto sauce!
Do you blanch the spinach before adding it to the food processor?
Nope, just toss it in there!

You definitely can
You can also chop it by hand to be honest...a little more time but depending on the type of person you are, it can be very relaxing
Can frozen spinach be used for this recipe?
You could try it. I would let it thaw in a strainer and squeeze it really good to get most of the water out.
i’ve used frozen spinach in a recipe similar to this one and it was good! i heated it in the microwave with water!

It makes little difference, perhaps taste-wise, but I've used frozen spinach just now. I just gave it a few minutes in the microwave to thaw up a bit before I put it in the foodprocessor.
Only italians an replace Italian recipes.
Do not under any circumstance cook the pesto, it should be mixed with the cooked pasta off the heat.
I always like to finish my pasta on low heat so all the flavors come together!
