Good day sir, how about if the heading is 355 and the apparent wind direction is 030S, how will you calculate it. bc i see that that youre having a heading of 025 and an apparent wind of -30(bc its portside as you've said in the explanation) what youve done in the example is 360+25-30= 355.

I think the direction of the true wind is not NW. Its from SE according to the direction of the vector of true wind
