They make the movie theater boxes of charlston chews that are pre cut to the purfect size. Makes it really easy to load the trays. They sell them at Walmart for like $1.24

Hi David, Thank you for sharing your experience…you are an excellent teacher!!! Just wondering if you ever use the “SKIP” warming trays feature for the C-chews? Or do you always allow your trays to warm to your set temperature? And if so, do you add any extra time to warming trays?
Yes most of the time I don't warm the trays. If you want any candies to "puff" up more, then warm the trays.

hi i watch all your videos and learn from you a quick question do you do warming tray or skip and thanks in advance
Idea: Use the silicon mold to organize the rollers, flip the Al tray on top and then turn them both over together and put in the dryer. Then either remove the silicon tray and maybe the rollers will stay put, or just leave the tray over top of them during the freeze drying process. Freeze dry as normal and see how it turns out. Maybe they won't stick if you leave the silicon tray over them.

David could you tell me if you have freeze dried Starburst and what settings to use to make them airy. Also same with gummy bears
Starburst get hard when freezed dried unless you warm them in the oven first at 200 for about 10 to 12 min. While your doing that start candy mode and start warming your trays add extra 4 min. To so that you can transfer from oven to fd. You don't want starburst to melt too much because they will really expand. Bit they come out like and airy when u melt in oven. The gummy bears run candy mode increase temp to 150 don't add any extra warming add extra dry time I do 4 hrs. When done let machine temp reduce to 60 degrees or lower then open drain. Works same with gummy worms. Hope that helps

Have you tried freeze drying chocolate bars?
Doesn’t work, only chocolate that works is when it’s the surface texture of something inside it like caramel or marshmallow.

Have you freeze dried hard butterscotch disc candies? Should candy be cut like jolly ranchers or left whole?
I have not done those candies before. Generally, I like cutting candies to make them smaller and bite-size so that they’re just easier to eat and you can fit more in the bag.
Hi, what settings did you do in the sentry section? I got the dry time and extra dry time but don’t know about the temp F and extra freeze time. 😊
Temp was 140 degrees, extra freeze time I drop to 1 hour or less. If you do candy mode it doesn't need to freeze.
do you do those on candy mode or do you have to do a regular freeze dry cycle?
Candy mode. Settings 140 degrees and I dry them for only 2 hours, I then put them in the freezer to cool the chocolate or wait for the freeze dryer to cool below 80 degrees after the cycle

Do you have problem getting the heat to the corners? I always have that problem with my machine. I have called Harvest Rights several times. After the update, they told me the machine is not originally made for freeze drying candy even though it has a candy mode. I am quite frustrated and hate to see how other people's tray fully puffed and freeze dried. I would love to hear how you solve that problem. Thanks
Unfortunately I don't have a solution. I'm in the same boat as a lot of others in this industry in that we have to deal with the same issues and work around them. Sorry I couldn't be more help.

So you just use your hands with no gloves 🤔
If you wash your hands it's actually more sanitary than using gloves.
