Feel like I should comment that I’ve literally made this about 100 times now and it never fails to impress people who think veggie/vegan food is bland or ‘needs meat’. Great versatile recipe!

I have missed spag bol so much since going veggie and wasn't expecting to find a veggie recipe that lives up to it, but this sauce has that beautiful richness and those porcini mushrooms bring such a full flavour to the mix. I've been covering it in (veggie) parmesan and going through mounds of spag feeling like I'm 10 years old again. What a beauty of a recipe!
I actually made this last night and it was heavenly, so much flavor and depth. I couldn't find the dried porcini but used mushrooms from a jar and boiled dried lentils. Amazing dish. Oh and paired it with (also doused with) a lovely cabernet sauvignon. Yummeh, 5 thumbs up!

I made this for my wife tonight and it turned out amazing. I added some sun dried tomatoes because I had them around, I used shiitake because I couldn't find porcini, and I used vegan parmesan. Thank you very much.

Every veg knows that not every cheese is vegetarian. Nothing special here really...
cheese is vegetarian. Vegetarians do not eat meat so cheese is not a problem. However, I think he meant to say vegans; they don’t eat animal products so they would avoid all things dairy
@@lamiah5604 Wow someone speaking for something they have NO clue about. Of course cheese isnt vegan, everybody knows that so why would he mention that lmao. And no, not every cheese is vegetarian. Some cheeses like parmesan and old gouda contain animal rennet taken from calve's stomachs and those calves need to be killed to obtain rennet. So again. Not every cheese is vegetarian bc vegetarian doesn't always just mean not eating meat. But also avoiding food that contains dead animal parts. Did you even watch the video? I bet you're not even vegetarian however you claim to know so much about something youre not part of...
melodramatic Wow, making assumptions are we? I’m a vegetarian and I know that there are different types but I am simply talking about the general vegetarianism out there. I know about the calf stomach cheese stuff, but there are many vegetarians who keep eating it anyway. Just like how many all vegetarians don’t eat meat but don’t shy from sweets with gelatine. And I am just commenting this because I have seen so many vegans thinking that they are vegetarian or labelling themselves vegetarian because ‘vegan’ has become so stigmatised nowadays.
I really don’t know what you think, gives you the right to reply in such a snarky manner. Making assumptions based on what? You don’t know my life. I’ve been a vegetarian for 9 years. And I never claimed to ‘know so much about it’ or be an expert of any kind. Don’t know where you’ve got that from.
Even in a case where I’m wrong, or my answer is lacking, you’ve got no reason to be this snarky and childish in a single reply. Disappointed to see that 6 people liked a comment from a person who cannot even convey their opinion in a mannered way. Your username really matches your reply.
@@lamiah5604 IKR I’m guessing they’re young and angsty or at the very least completely lacking in online etiquette and feel empowered by the “invisibility” of online interaction so they feel like they can get away with saying things in a snide way.
This has become my favourite go-to Covid lockdown recipe. I add chilli oil (or chilli's), some fresh mushies, a bit of tomato paste. And have found that boiling up dried lentils is a real treat - if you could be bothered. Yum.

To everyone saying this isn't bolognese because it contains no meat: What you consider bolognese probably isn't bolognese either. Most people think of bolognese as a tomato sauce containing ground beef. Officially, bolognese uses chunks of stewing meat that's braised for a long time rather than ground meat, and it has to be a mixture of different meats including beef and lamb (and sometimes pork), not just beef.
If you're going to criticize someone else, get your own facts straight first.
It obviously been called Bolognese to make the recipe relatable. There’s no claim that this is an authentic bolognese Ragu. I guess he could have called it ‘a vegetable tomato based sauce with flavours similar to that which some may recognise from the British adaptation of a Bolognese recipe’

vegan parmesan is SOOOO easy to make if you have a food processor; you can get finicky and use soaked cashew nuts; I just throw a cup of raw almonds, juice of half a lemon 1/4 cup nutritional yeast, garlic powder to taste; salt as well of course ;pulse first then 1 minute on medium speed keeps forever 1 tbsp 50 calories no it's not meant to fool anyone just tastes great!
This is how I normally do my Bolognese nowadays, trying to consume less meat. Any mushrooms will do, and I also put courgette and/or aubergine. Delicious!

Yiann SC I don't have Porcini Mushrooms just regular mushrooms from the fruit market. Do I still pour that boiling water over them? Will it still make a broth? I am a new vegetarian and dont wanna fail but so far I've been struggling to make nice dishes
caitliin hernandez You don’t have to boil the mushrooms if there’s enough liquid in the sauce already. Sometimes, I put more water after adding the tinned tomato- using the same tin- if I’m using dry mushrooms. If your mushrooms are fresh from the market, just add them straight when you’re browning the other veggies and before the tomatoes. I would suggest you take your time cooking, look at the food cooking, see when it starts caramelising and how things combine and harmonise. Seasoning is key, sometimes it requires a bit more salt and/or pepper at the end.
I’ve just made a Chilli sin Carne 😆, following similar rules and it was so delicious!

Hi jamie, i love how you are making heap's of vegetarian meals now its Awesome.
An alternate or in addition to lentils you can add soya mince. That gives t the texture of meat and is meaty in flavour as well. That's what i use and it's brilliant

They're brown lentils and they are the recommended for a bolognese-type sauce! :)

Parmesan cheese is made using calf rennet and your favourite chef should know that.

It would be completely vegan without the cheese or you could make/use a nut or soy based cheese product to keep it vegan.

You can add cubed aubergine instead of mushrooms as well.
Im sure aubergine would go great in it, but IMO the porcini mushrooms were the magic ingredient in this dish. They just packed so much flavour into the sauce. I wouldn't go without them if possible!

Porcini mushrooms were USD$3.50 per 10 grams at my local in Australia ($7 for 20g!) so I used Shiitake instead. Still tasted great!
Pro-tip: add a little Worcestershire sauce for an extra meaty/umami flavour! (NB: it contains anchovies, so not for strict vegetarians).
I love this recipe! Note: I've added kind of accidentally an extra can of red kidney beans to it and it took it to another level! Try it! 😋😋

That really can't be three portions of veg per protions - just look when it's plated - mostly tomato sauce. Also, a tin of lentils for that much sauce isn't a lot either. I usually have much more veggies and lentils when I cook it so it's more substations, and not only pasta.
I could be wrong but I think italian style cooking is more about coating the pasta with sauce with big flavor, rather than making a dish with closer to 1-1 sauce to pasta ratio.
You're right: there aren't 3 servings of veg per portion in this recipe. Jamie's talking out of his porcini mushroom.
Well if you eat the whole pot yourself why not. That's what I would do, at least...

I'm glad he mentioned the Parmesan not being veggie, but watch out for wines, too. Isinglass is distinctly non-vegetarian.
Why what’s in it
@@lordboros2959 isinglass is a type of gelatine made from fish bones, which is used to clarify beer and wine - there are vegetarian wines (and beers) available, but you need to be careful to buy the right type if you're vegetarian.

@@lordboros2959 I'm not vegetarian either, although I eat a mostly vegetarian diet. I am curious, though - as a non- vegetarian, you eat meat (and/or fish) so why is gelatine wrong?
Keith Hanley because fish and meat have nutritional benifits such as protein iron vitamins etc but gelatine is nothing its just bones and ligaments and we can use plant based gelatine that taste the exact same and have the same effect on food

I agree wholeheartedly but the dairy industry is the cruelest of all. I don't miss cheese anymore but occasionly make my own substitutes.

@@rainierfrog I haven't made any actual 'cheeses' for a very long time but used a book by Miyoko, called Artisan Vegan Cheese that I got from my local library. These are mostly (all?) fermented cheeses so you have to be prepared invest time but fermented/cultured vegan cheeses are very close to the real thing. These days I only really make 'cheese' sauces, the base usually cashews though sometimes a white bean or even cauliflower, with various flavorings such as white miso, lemon juice, mustard, nutritional yeast. I can't help you with a specific recipe because even if I follow one it's very loosely and I usually end up just adding what I feel, tasting as I go. Oh, onion powder is good too and sometime I use some pumpkin for flavour, nutrition and colour too.

Do you have the brand Barilla where you are? We use their wholwheat pasta all the time. My kids love it too.
+Rebecca I will look for it. I just fond the pasta not as smooth and kinda chewy even if I cook it according to the package directions.
I know what you mean. I found that too. Sometimes i boil it for a little longer just to help give it a smooth texture. Not too much longer though otherwise it's too soft :)

We made the switch to whole wheat several years ago. At first, I thought it was weird and didn't like the texture, but I found if I cooked it a couple minutes longer, it took that extra texture away without making it too soggy. Also, after eating it for a while, you do get used to it. White pasta now tastes very bland to me.

Sometimes the juice it's in adds flavour and thickness to a dish. I only rinse half the tin.
You don’t need to rinse them from a tin?
In the UK you don’t have to rinse lentils or beans anymore, they all come pre prepared ready for use straight out the tin. Unless you buy in bulk from a whole foods store or something
