It's that time of year again when students leave home for the first time and have to fend for themselves. This spaghetti Bolognese is the perfect beginner dinner and also works for people of any level. It's so rich in flavour and texture and reheats well the next day or can be eaten cold.

Recipe - Lentil Bolognese - Vegan
300g Whole wheat Spaghetti
1 Red Onion, diced
2 cloves Garlic, finely diced
1 Red Chilli, finely diced
1 Carrot, grated
1 punnet Mushrooms, chopped
1 can diced Tomatoes
1 can Cooked Lentils, rinsed and drained
1 Tablespoon Agave or Maple Syrup
Salt & Pepper to taste
• Heat oil in pan
• Add chopped onion and garlic and cook over medium heat until translucent.
• Add mushrooms and cook until golden
• Add carrot and lentils
• Add Agave and Basil and cook for a few minutes
• Add the cooked drained spaghetti to the lentil mixture in the pan and mix until combined adding some pasta water if needed.
• Sprinkle with more chopped basil and eat!

Just made this for dinner. This is the best spaghetti I have ever had. My husband and I sat in silence as we slowly ate this 5 star meal. We felt like we were fine dining. This will be my go to when serving people now. Instead of red onion and garlic I just used a shallot and I used baby portabella mushrooms and added zucchini.
I like how they added "student friendly" in the title. Haha

Honestly my go to recipe since I became vegan. I make this probably every 2 to 3 weeks because i just love it so much. Already made it for my family, friends and boyfriend and everyone loved it. Thanks so much for the recipes. Really cheap and easy and i think even better than non-vegan bolognese!

Thanks, guys. Looks good. Sometimes in the past my lentil bolognese have been kind of chalky and dry, so I add a little more olive oil. Keep the good eats coming.

I really like this new series; loved the 1 2 3 4 Yo Dudes! Like waiting for a really good rock band to start a classic song. September is always a bit like New Year for me -- not a student at uni anymore but where I work. For anyone on a budget who wants fresh herbs (of course dried is great) if you have a cat who will eat anything not nailed down, herbs like rosemary basil thyme parsley won't hurt them -- no balcony no problem can perch on window sill; mine last well into late November in those igloos everybody thinks we live in in Canada :) -- seriously not a problem. The mushrooms really have the texture of meat if you're missing it; in Britain chestnut mushrooms are called cremini elsewhere; recently learned that white button mushrooms, those small brown ones and the big portobellos are all the same; just different stages and rated no. 2 after porcini as the most packed with good things for us ... brown lentils great, sometimes for texture I make red lentils separately on the stove and add to sauce because they go mushy if you're particular about your sauce and yes yes, used the whole plant; parsley stalks chopped fine are super healthy. For people who can't eat oil, get that but carrots, very classic in Bolognese cooking - French call it mirepoix, the Italians sofrita -- veg with fat soluble vitamins like carrots do become more bioavailable with the addition of some fat in whatever form. Always blither on a bit; always great helpful videos.
I think because for 20 years of our lives September always means a new start or class we feel it as we go on from academia. It's a weird second built in body clock 😅

My good friend lives in Brazil and what I envy is that she can go wild swimming ... whenever even now under lockdown. I think I miss that the most also a real book in my hand not just Kindle and zoom ... although they have helped us through. You guys and your wonderful community constant inspiration!

I have exactly one punnet of mushrooms and a carrot in the fridge. #meanttobe
I don't really like vegetables that much so cook fresh pasta like tagliatelle and make my own veg laden sauce so I get my 5 a day - with a salad and/or a smoothie- I've added grated carrot, peas, cauliflower rice, etc. Never thought to try lentils in a sauce so as I have a packet of Merchant Gourmet ones I'll try this tomorrow only with tagliatelle.
I'm not a vegan I'm a pescetarian, gave up chicken a while ago. However I'd guess about 60% of my cooking is vegan so you guys are a great help to add to my repertoire.

Looks delicious. Definitely gonna make it. Just one thing. Instead of sugar, I love to add a pinch of cinnamon to any kind of tomatosauce. Gives it a really nice flavour.

Great recipe and looks delicious too. I have a question though, I can't eat mushrooms, which makes all this plant based cooking a tad more difficult. Do you have any idea for a replacement? Mushrooms give so much flavor, just skipping them often does not work.
